Authentic Red Chile Sauce | Four ingredients, 20-minutes, epic, New Mexican staple

This easy red chile sauce recipe from scratch can be done at home with a single pot, a blender, and a handful of simple ingredients. When it comes to making red chile sauce at home it's best not to overthink it: keep your ingredients simple and your process short and sweet. This is one of those videos where delicious doesn't mean complicated techniques and split-second temperature monitoring. Just plop some pods in some hot water and wait for the red chile sauce magic. My family has been making this red chile sauce recipe for generations: it's pretty dang fantastic.
Also, if you're in New Mexico, just call it "red chile" there is no need to add the "sauce." You might get a look. You'll probably get a look.

For the red chile sauce
12 chile pods
5 cups of water
1/2 tsp Mexican oregano (it's different, don't use Italian [you've been warned])
1 head roasted garlic
1 1/2 tsp salt
1 tsp honey

I use mild pods so I can add more spice later. Don't tell my father-in-law, he'd disown me. He's a hot chile purist. It's a New Mexican thing.

    Hello! Thanks for making this video! I lived in AZ for many years and was fortunate enough to have enjoyed New Mexican cuisine there. I live in FL these days and recently found red chilies from Hatch in the produce dept of my local grocery store. I immediately bought some, not even knowing what to do with them. However, I figured that some savvy KZreadr would have a video or two ... After making this recipe a couple of times, I have modified it slightly. I use 13 pods, 2 heads of garlic, and an additional 1/2 tsp of salt. This sauce is great on everything! I will be marinating a pork tenderloin in it, prior to smoking it tomorrow. I have previously also made your Adobada Pork, following your recipe exactly . That was a hit! I will be making that again.. So, again thanks Ben! I have subscribed to your channel, and appreciate what you do! .

    I am addicted to making chili / hot sauce. It is some kind of magical experience. I like to add a habanero for a bit more flavorful heat. great video and sense of humor.

    Habenero is one of my favorites! That quick, sharp, spice! Love it! Years ago I did habenero honey lime chicken wings. Just talking about it makes me think an episode might be to happen.

    What kind of chilis are those? I started some seeds called "Isleta Long Pueblo and Cochiti Pueblo", would those work dried out? They say they're from NM. Looks great!

    Lmao - my wife is from New Mexico. "I don't understand people who didn't eat red chile 6 times a week" is a real thing. I joke that she would eat it on her breakfast cereal. Living outside of NM every time we go out to eat Mexican food I have to remind her that the "red sauce" is not what she wants and not to order it.

    Is there are a reason that you roast your garlic differently in this recipe compared to the pizza? I'm doing it the pizza way to save 10 minutes, but feel free to let me know if I'm making a terrible mistake!

    No reason, it'll roast either way, but lately I've been covering them and having better results (by that I mean the little ones stay soft).

    Would you recommend air frying the garlic part? For some reason it would feel strange to me to pop a little thing of garlic in a full sized over for 40 minutes.

    I flipping love my air fryer! It's a baby convection oven, so, yes! Go crazy! Just keep a watchful nose out for overdone garlic. 😳

    Yes, Anaheim chilies (grown anywhere) work a treat for hatch green chile substitute (sacrilege for a New Mexican to say, but go with it). For red, you can Amazon bags of it all over the world.     Nope. You’re just breaking down the chile pods with the head and infusing your water. You CAN cook meat or other veggies in it once you make it (but don’t tell the purists… 🫣).
