    A lot of people seem to add oregano and being born and raised eating this my entire life, with my Grandma who was born in San Ildefonso Pueblo and family from Santa Fe they NEVER used it, when did they start adding oregano? I love New Mexico chile, it’s the best thing on earth! We always have a supply and every year roast sacks of Hatch green chile and pack it as my grandparents did to have it ALL year around. 🙏🏽

    Agree about the oregano. My grandmothers and mother never put it in chile. Gives it an off taste that's not quite New Mexican.

    They started using oregano but only Mexican oregano when Pancho Villa came over the border looking for his two sacks of gold. Cumin came beforehand.

    One thing I love about NM and talking about how to make anything in NM cooking; it’s very much like going to Italy and asking how do I make …? It depends on what part of the country / state you are in. How did your mom / your grandma make it, are you using products from northern NM or southern NM?

    My mother always roasted her chile pods in the oven prior to softening in hot water. Her chile colorado always had a "smokey" flavor.

    Prefer to boil mine and it still come out delicious. Unless i want a smoky flavor than ill do that.

    Loved the video. I had to move to a humid climate. Would roasted then frozen Chiles work instead of dried and reconstituted pods? Hard to store dried pods here like we used to.

    I LUUUUUUUUV N.W. New Mexican style pozole mad with pork hock, jowel, or salt pork, & chimayote Chile powder. A very hard to come by Chile pepper that is mild but tastes alot like smoky paprika. It is said that volcanic minerals in the soil around chimayote, & four corners New Mexico give the Chile a very unique flavor! It costs; but I'm willing to pay for it.

    It's Chimayo, not chimayote. Hard to come by. You need to know someone who is growing it natively.

    @@gilbertflores2182 I have a Vitamix, it's the best blender available - pricey but well worth it. And no, nothing stains the vitamix pitcher that I have ever found. It is an extremely durable polycarbonate material.

    Like the simplicity of your recipe. However, I'm unable to find Mexican oregano anymore. Ta Lin market used to carry it, but doesn't anymore. Where can I find it in albuquerque?

    Mild chiles are guajillo chiles. You can find these in the spice or Mexican food aisles at your grocery store.

    I tried soaking my chilies in water for 24 hours and they turned out very bitter. What is the soaking process too long? Should I have just boiled them for 30 minutes prior to blending them?

    Chili on the comal till soft. Dump in blender with boiling water (rest a few minutes in a vitamix) and then add salt and ROASTED garlic. Smash. Use as braising liquid with stock added later on that damned pork shoulder. Braise til tender. Taste at the end point and season to taste with 1/2 hour left. Braise til fork tender. Reserve FAT for drizzle on taco cuz flavor town. Guajillo lots. Morita half that. Fistful of ancho. Onion roasted. Garlic ROASTED + couple garlic nobs. Water. Later stock.

    With the Vitamix, you don't need to de-seed. It pulverizes the seeds and breaks it down to the cellular level. You can then just use a sieve and strain, as needed.

    You can do whatever you want. If the oregano is a no go. Thats fine dont put it. You can do anything with this recipe.

    this is not the real Mexican chile. No oregano but yes garlic ang a piece of onion into the blender. later this sauce has to be cook beside de chiles being boiled or it will give a fkavor of uncooked sauce. in a pot with little oil we cook the sauce stirring obce in a while and add salt. ok. it IS ready for enchiladas or whatever.

    she didn"t day it was "real" Mexican Chile. it's NEW Mexican red chile. New Mexican cuisine is regional. can't be compared to Mexican.

    Elizabeth Pulido I’m not Mexican I’m Spanish and I and my family make it different in NM not like Mexico. I just add garlic and salt to my Chile when blending it. I don’t like all the spices Mexican use in their food. I like to call my food authentic Spanish food not Mexican because their cooking is way different. I love Spanish rice just with garlic and onions and tomato sauce and chicken broth pepper and salt. I don’t like it with vegetables added like Mexican like it.
