    For all those that are confused, I hope this makes it easier to understand. What she’s saying is that while we don’t consider fiber as carbs in our normal vocabulary, scientifically, they are also carbs, but what’s special about these particular carbs is that it doesn’t break down in our digestive tract as glucose and so does not contribute in spikes. Hence it’s totally okay and healthy to eat any fibres (excluding fruits because of additional sugar and veggies containing starch like carrot or patato) at the start of your meal. Going forward when she says carbs, she will mean foods containing starch and sugar and so this won’t include fiber.

    raw carrot salad with vinegar, not. Cooked carrot has 3 times more carbs and it is little raising.

    Fiber is exactly why I chill my cooked potatoes before I cook them or make potato salad. I'm a 65 year old diabetic that wears a cgm. I've seen how it affects my glucose. That resistant starch effect is awesome 😎

    Basically what she’s saying is. Scientifically, Fiber is carb too, but it’s a special kind of carb that goes through our digestive track without being broken down to glucose and creating large spikes. So it’s healthy and can be eaten as a vegetable starter. Going forward when she mentions carbs, she’s talking about carbs that spikes glucose like starch, which does not include fibres. Hope it’s clear now.

    Short term response doesn’t always equate to long term problems. For example look at exercise. Short term it raises blood pressure, heart rate, inflammation etc. but long term we know it’s good for you.

    I loooove grated carrot and always put a lot on my salads. Does her book contain comprehensive separate lists of foods and what they are; carbohydrate, fibre, starch etc as I find it very confusing what we can eat and which ones are best to eat, and eat together, to obtain maximum energy.

    Fiber simply refers to substance which contain certain structural polysaccharides(molecules containing several sugar/carbohydrate units) ,mainly cellulose (linear homopolymer of beta-glucose) Since humans lack microorganisms that produce cellulase which break beta linkage between glucose units of cellulose,so it simply goes undigested and does not contribute to blood glucose level

Foods are classified as low, medium, or high glycemic foods and ranked on a scale of 0-100. The lower the GI of a specific food, the less it may affect your blood sugar levels. Raw carrots have a low glycemic index, which means they have minimal impact on blood sugar levels. This makes them a suitable choice for individuals with diabetes, as they are less likely to cause significant fluctuations in blood sugar. Raw carrots have a GI of 16 and the GI for boiled carrots is anywhere from 32 to 49. That puts carrots in the low glycemic food group: 1-55. Yes, you can have carrots on your pre-meal plate.

    Although certainly important, there are 2 other tests that will give you a much better picture of your glucose metabolism. Get them both. You may be surprised. 1. Fasting Insulin 2. 2-hour Glucose Tolerance test

    Sugars in fibers or tied to it, get absorbed slowly , hence tgey don't spike the blood sugar which is very significant.

    I quit doing any fiber. I have better gut and bowels now. I have not had a diverticulitis flare up in almost three months. Stools are normal, yet very small. I do animal based only.
