Antipasto Pasta Salad - Food Wishes

It somehow seems wrong naming a pasta salad after a dish specifically designed to be served before the pasta course, but if this incredibly delicious, colorful salad is wrong, I don’t want to be right. This would be great as a cookout side dish, or add a hunk of bread, and a glass of wine, and make it a meal all by itself. Enjoy!

    I just went to the recipe link and there are missing ingredients next to some of the amounts!? I just got all set up to make this and now I'm not sure what do. Hopefully it's just a minor glitch. Hoping to get this done today.

    I think they list the ingredients in order down in the steps part of the recipe. So I guess I'll go by that. Really weird that they're blank though on the ingredients list. ¯\_(ツ)_/¯

    Chef, i tried this and it was legit my favorite thing ive ever tried on food wishes, i just did more salami instead of pepperoni and ham, and put cayanne in i also added a bit of broccoli to the pasta salad (i know its not traditional, but it worked really well) left out the jalapenos, and also drizzled a little more olive oil as well as sundrying my own tomatoes, also used banana peppers instead of pepperocini, and i also did parmesan to finish it along with the parsley and tomatoes. it came out freaking phenominal, thanks for an awesome recipe and always giving me more ideas with my cooking

    So *that’s* the secret to getting your pasta salad to stay blended! I never thought of julienning everything really narrow and to the length of the pasta. Definitely going to use this technique from now on. 👍🏼

    This is, and has always been, one of my favorite summer dishes for potluck/bbq. Everyone else was freaking out about the grilled meat and I ate the entire pasta salad while they weren't looking 😉

    If you don't want to bother making the dressing, Olive Garden sells a really good bottled Creamy Parmesan Italian Dressing that my family uses in our antipasto salad.

    Yes! Or roast some grape tomatoes on a baking sheet, sprinkle with olive oil and s&p. Roast 'til they split. Toss them in!

    Yes and leave out all peppers...and leave salami in big quarter cut sizes and cheese same big pieces

    Pasta salads are such a nice summer meal! I had a mediterranean themed one for lunch with cucumbers, tomatoes, red onion, kalamatas, and feta.

    some great tips here. next time i'm making a pasta salad i'll remember to 1. cook the pasta fully and use plenty of salt. 2. use the dressing mostly for the pasta, not the rest. and put it in first. 3. cut up all the garnishes really finely. 4. save the tomatoes and fresh herbs to add right before serving.

    Hi! Antipasto is really just an Italian term for "appetizer." As an Italian, we Mediterranean people nosh, or like to "graze" our food casually; converse, laugh, drink wine, etc. It usually refers to platters of charcuterie; preserved meats, various cheeses, pickled vegetables, etc...all lain out with various crusty breads, crackers, breadsticks, etc. Chef John turned that concept into a summer salad, "Antipasto" style, and ingeniously I may add. All that was different was the traditional ingredients were tossed with twisted (rotini) pasta.

    @@spicybeantofu Nah, it gets worse. Composed salads aren’t mixed, or in a bowl! And if you check the history of the word “salad,” it comes from the Latin word for “salt”... just like the word “salsa.” Yo what!? Hahaha.

    He explains that. Antipasto is meats, cheese and flavorful veg, like peppers and olives. He simply adds pasta and it's a meal.

    I’ve tended to make variations of this type of pasta salad and keep the whole thing in its own Tupperware but when I’m ready to eat it, I’ll add some lettuce leafs to my bowl and add the pasta salad on top with some croutons. However that requires me to have extra sauce available on the side to get the lettuce dressed up too. More healthier this way

    I recently ventured out and made pasta puttanesca. Put a whole tin of anchovies in and it isn't as strong as you might think. But with the capers, it was a bit much for me, so salty

    @@judyjohnson9610 yes canned anchovies more than anything add a lot of salt and savory flavor, so if you should keep that in mind before adding any other salt to a dish with them in it

    This looks great. One of my favorite things to make, is my cheese tortellini antipasto salad. Adding the dressing while the pasta is still warm makes all the difference!

    I made this a mere hour ago, with what I had around. Pasta wagon wheels, jarred antipasto, used the salami and provolone, forgot the tomatoes (right on the table yet!) and ate it still warmish. Definitely a DO OVER!!! Esp with the real ingredients, awesome, love this! Ten thumbs UP!

    Chef john, very nice recipe, & i agree if you are not finishing your pasta in a sauce, do not cook it al dente, but finished as per the directions on the box. I really like the dressing recipe also, & believe it or not i had this with someone using a zesty golden italian dressing with sugar stirred in til dissolved, had my doubts, but it was delicious as a sweet golden italian dressing( not creamy), i was surprised how good it tasted. God bless all folks & please stay safe, sure be glad when this covid-19 has been cured, really has affected the food industry, restaurants, grocers, & even meals at home

    I am so happy you did not rinse your pasta ! My 30 year younger niece , as sweet as she is, insists that you have to rinse pasta! And even after I remind her that I lived in South Philly for half my life, she still argues.. now I have Proof !

    I rinse pasta in cold water to stop it from cooking at its current state, which makes it not stick together. I know what you are saying (to not rinse), and I know to add oil or sauce to make it not stick, but I want the pasta done while not sticky, then freezing it for instant meals.

    I never thought to add the tomatoes and parsley at serving. I make a lot of salads and usually mix tomatoes and parsley in early. I think moving forward I might add some tomatoes to help marinate for flavor and liquid but keep parsley and the bulk of tomatoes as a last minute add in. Thanks, Chef John!

    There is no way I would I put fresh parsley in anything because of my frustrations from childhood days of messing things up with the parsley ending up everywhere except the chopping board.

    I’ll usually put tomatoes in about an hour or so before serving. They don’t need a lot of time to grab the flavor but it’s not so long that the liquid ratio is called into question,

    It's so true! Fresh herbs can get a little "slimy" after being wet and Mari Stef for some time, unless they're cooked into a sauce (like a meat sauce). He has such wonderful cooking tips.

    @@stefanmarchione6757 My life changed for the better, when I started taking most of the seeds out of raw tomatoes! Yummy tomato taste and texture, without the slimy wetness that often makes them spoil salads and sandwiches.

    @@ravenbishop2557 That's not what anyone suggested, though. "How To Cuisine's" comment was a direct quote from the video and the point Chef John was making was that the anchovy adds no nasty fishiness or what people typically wouldn't enjoy about anchovy, it just adds a rich saltiness. So if you don't enjoy anchovies alone, feel free to add them to the dish as you won't taste them. No mention of allergies was made. I'm sure everyone involved, Chef John included, would agree that if you are allergic to anchovies, you shouldn't be eating them. I hope I've cleared that up.

    @@ZOD4 adding a high profile allergen to a food which doesn't commonly contain it, is very dangerous. many people believe that people who say they have allergies "just dont like" the thing they are allergic to. you take this to a party or church function no one would guess it has fish... you may not be near the dish to tell them... its a very bad idea. if making it for people you know all about, it may be a great idea... supporting the idea that hiding anchovies in things is fun, is a very BAD idea

    After 2 months in the hospital back in 2018 with nothing to eat but boiled potatoes, I spent all days watching videos like this, and it created a desire to learn how to cook. Now cooking is one of my favorite things to do, although it is very rare that I am in good enough health to stand up for long enough to make a proper meal. So I pick and chose what dishes I will try out very carefully, since cooking is such a rare treat. But this thing just made the list! Looks amazing beyond belief, and will try to make it on my next good day!

    I was literally just having a conversation with my wife (the boss) about how we haven’t had good antipasto salad in a long time. I’m already a huge fan and subbed years ago.     Agreed...was just outside a few minutes ago talking to the hubs about what we’re going to make for our 4th of July cookout, and we decided that we definitely want to make a good pasta salad.     Lol, my gf and I were recently complaining about the antipasto we had at my brother's wedding. It was so nasty which is weird because his wife is Italian. It just tasted like everything was soaked in brine.

    This is ridiculously good! And so easy to modify with antipasto elements that you prefer! I think the dressing, ingredient-wise and technique-wise, is really what pulls everything together. Tossing the pasta while still warm really gave everything a lovely coating! I'm going to be happily eating this the rest of the week.

    AAAAAAAAAHHHHHH! I've discovered this channel and for days now I've been making Chef John's dishes! Italian Ice, beef dishes, it doesn't end lol. My wife saw this over my shoulder lol. So tomorrow, I have to make this lol. I was looking forward to an easy day of grilling burgers and franks. Not going to happen. Joking aside, this looks perfect for our outdoor party.     This is exactly how I’ve always made my pasta salad. Almost exactly the same. The only difference is the anchovy, a fantastic idea I’m adding from now on. Thanks for the nod - and the tip! Everyone loves this salad and it’s definitely a whole meal if you’d like. We do big family barbecues each summer.. until now.. sigh.. and it’s always a mainstay very much requested.

    I've had my share of boring uninspired pasta salads but this antipasto pasta delight is simply mouth watering delicious. Made it twice already and since I realized it doesn't freeze well make sure you have loads of people to share with. I'm going to make half a recipe in the future if it's a smaller group. Honestly you could feed a dozen ppl and still have plenty left over with this recipe. Nothing wrong with leftovers but if it's just you and the missus you'll be eating pasta salad for breakfast, lunch and dinner for the next two weeks. Absolutely one of my favorite Chef John creations. Cheers!

    This pasta salad looks so delicious my mouth was watering by the end of the video! Just love Chef John's quick wit and awesome fast videos. Watching them even got mt 70 yr old non cooking husband hooked and he is trying these recipes himself! Miraculous! Chef John you're teaching an old dog new tricks!     I might have to make this for our church dinner. Your recipes are the best chef John. Well, I did make this for the church crowd and it was delicious!!! I definitely will make this again. Those nice thin cut meat and cheese really made this easy to get all the flavors in each bite.I did cook the pasta completely and you’re right, it was perfect. I’m also going to make the dressing for other things too, I combined balsamic with some red wine vinegar and it’s amazing. Thank you Chef John!!!

    Sometimes pasta salad is served in an "aperi-cena" (=aperitif+dinner) which is a buffet style aperitif. Forget the crudités, apericena is a rich meal before dinner time that very often substitutes dinner. The word apericena combines aperitif and dinner (=cena) the same way in English we use brunch for the combination of breakfast and lunch. 👍🏻Bravo Chef John.

    I don't add cayenne to my pasta salads I use plenty crushed red pepper flakes. I guess it hits a different heat note but it's good to me.
