150g Pumpkin
1 Egg
80g Egg Whites
100g Sugar Free Choc \ Syrup
50g AP Flour
14g Coconut Flour
35g Unsweetened Cocoa Powder
5g Vitafiber
5 Scoops (162.5g) Casein Blend Protein Powder
5g Splenda (or more)
12-16oz Almond Milk
1 t Baking Powder
28g Unsweetened Choc Chips
1/4 t Salt
Directions:
-Mix wet onto dry ingredients
-Pour batter to greased pan or muffin tins
-Add most of chocolate chips in batter, save some for the top
-Bake at 375F for about 15 min, (soft bake it)

    I put 10 scoops of vegan protein 100grams plus a whole jar of almond butter 7grams *14servings 98 plus 4 eggs. I made 21 brownies which only came out to estimate 10 grams of protein per serving. I wish it had at least 30 grams. It tasted amazing but I was scared too much protein would ruin it.

    This recipe this bomb! All of the other protein brownie recipes just taste like dry chocolate cake. This recipe is the only one that tastes anywhere near the real thing. This is now one of my diet staple desserts. Thanks Mina!

    Best protein brownie ever. Realized I picked up sweetened vanilla almond milk and totally forgot to add the sugar-free chocolate syrup. I even over baked it longer than instructed by mistake, but holy crap was this still on point. You’re doing the Lord’s work, Mina. THANK YOU for this recipe!

    Just made these last night and they are awesome, I found that letting them sit overnight in the fridge seemed to bring everything together even more. This with some frozen sugar free cool whip is absolute heaven, even my picky daughters love it. Thank you and please keep up the great work.     It's been a hot minute since I made this recipe due to only having whey protein for so long, but I finally got on the casin protein train, and I'm all about it. I can't wait to make this. I have a really strenuous training plan tomorrow involving a lot of cardio, so I'm making this for my cheat meal. I can't wait to make this again as it was already good with whey, and will be whey better with casin. Hopefully my roomates/friends will like it enough to help me eat it.

    I'm binge watching your videos on my second monitor while working. Glad to see that there are still professionals making high protein recipes and not falling into the "Keto" fads. It just doesn't work for me because I can never stop at just one brownie and end up eating 3-4 in a sitting. I have so many questions: 1. Could this work with a parchment paper lined baking dish? 2. Wouldn't sifting the dry ingredients improve the consistency?

    Another excellent anabolic recipe. Only modification I made was adding a teaspoon of espresso powder to enhance the chocolatey-ness and I had to bake for 20 minutes in my oven instead of 15. You're right, they won't fool you into thinking you're eating a real brownie, but the taste is great and the macros are killer. I wish there was a way to just triple the bittersweet chocolate chips without adding any extra calories. Suggestion for a future recipe ... chocolate peanut butter brownies, whereby there's actual swirls of water+PB2 mixture throughout the batter or even just a layer of water+PB2 in in em. The PB2 would only make it more anabolic after all.

    I have a question that may seem dumb. Could you substitute a whey and cottage blend instead of the whey casein blend in a pinch? And if so do you believe the resulting mixture would need slightly less almond milk due to the moisture in the cottage cheese? Thank you loving the videos

    I actually think this is a great question. Cottage cheese MIGHT work, but when it's heated it gets a very gummy consistency. If you try this I would definitely start with no almond milk at all and add it in if you need it, like you said there's a lot of moisture in it. Cottage cheese also has a small amount of whey in there. I'd be very interested in how this turns out if you do try it.

    I live in Europe but we don’t have pumpkin here what can I substitute the pumpkin with? I heard sweet potatoes is an option or using peanut butter or coconut butter is a good substitute but they have too many calories.

    I made this and it was delicious! I have a concern though. My brownie never solidified sitting in room temperature. When I put it in the freezer it solidified, but when I tried heating it up (for a brownie sundae) it turned back into a pudding like texture. It still tasted good though! Is there an ingredient that you think I may have missed? I didn't have vitafiber, so I just put 10 grams of truvia instead. Would that have messed with the texture? Edit: I think it might have been my almond milk! I originally put 6 ounces in, stirred and it was still thick so I added another 12 ounces I think. I should have added slower!

    Hey Mina, why the pumpkin??!!! I made a brownie recipe not too long ago from Remington James and it came out like pure dog sh*t!! On top of it, all I tasted was pumpkin. Im not a pro chef by any means but i’ve been cooking for years and pretty solid in the kitchen. Just curious about the pumpkin thing. Thanks for your dedication and hard work, and please keep it up!

    Yeah it's not so crucial. Add the sweetener but since it's liquid you might need less almond milk so just add a little at a time

    Have you tried King Arthur's keto wheat flour? They say it substitues 1 for 1 with AP flour, but has 17 g protein per serving and 4g net carbs. I'd like to get your opinion on using it in recipes possibly as a substitute to make recipes more anabolic but still get that texture regular flour gives.

    Hi I see alot of these types of recipes with canned pureed pumpkin . In my country we don't have this is it possible to just use fresh pumpkin and how would you prepare it for baking?

    I made a blend of 1kgr of each. Brown Rice protein. Pea protein isolate. And a vegan protein blend from MP. Its more like flour think. When i try coach's anabolic cookies. Its co. E close to a brownie consistancy. I add a bit more water. What i ned to say is. Can this brownie be made with vegan protein blends

Would Walden farm's chocolate syrup work for this recepie instead of the regular chocolate syrup? Also that PEScience stuff can be hard to find here, would any kind of chocolate Casin/whey blend work in theory, or do we really have to use that one?

    Congrats on snagging the VitaFiber in the powdered variety... The liquid syrup is hard enough to find, but the powdered form is practically impossible to find

    I am a little late to the party, but would liquid vita fiber work just as well? Vitafiber will not ship the powder stuff to the US. Can I also sub more splenda for the Vitafiber?

    Im curious as to what's the point of the pumpkin in the recipe. Does it add texture or is it just a filler ingredient meant to bulk up the batter while adding very few calories aaand is it necessary?

    Not a big fan of artificial sweeteners - any thoughts on either substitutes for the sugar free chocolate and vitafiber that don't alter calories/macros much, or leaving them out completely?

    Michael Mitchell I know if you want to make syrup from powder it’s a 3:1 powder to water. Just keep in mind you’ll be adding water so you’ll need less almond milk

    You can def try it (probably will change the consistency to more cakey)..I'm not sure at what proportions though...but since Greek yogurt has liquid, you would have to put less almond milk.

    i can replace pumpkin with zucchini?, why not add xhantam gum instead of regular flour and more coconut. i mean im not a chef, i just saw in some keto channel that you can replace the gluten with xhantam gum and psyllium. im a hugefan of the anabolic kitcken. and now yours. if you could explain the chemistry reactions on the baking process would be amazing for the people who want to involve Science in their lifes. keep the good work :D

    First off, I love the questions! 1. That might be very possible Ive seen people make squash brownies, just different moisture content 2. Xanthan gum instead of flour would give you a gummy consistency not so much cakey like we're looking for. You could add more coconut flour but a note: I found it absorbs more liquid and makes things denser so keep that in mind! 3. I'm not sure if you can replace it with psyllium, maybe, I simply don't know. Thanks, Hope that helped!

    I finally got around to making this. Unfortunately I must have messed something up. After baking, I covered with foil and it became mushy... Can you please clarify the post-baking steps? How to tell whether it has baked long enough? How long to cool afterwards and how? (covered? on rack?)

    Lone exception are the corner pieces which came out quite well. I let the dish cool and set overnight, covered with foil. Tried cutting in this morning, but most of it was mushy. Baked it at 375 (confirmed temp with oven thermometer) for 17 mins in a 9x13 glass baking dish.

    I just leave it uncovered in the pan, put it in the fridge a little if it needs to. The middle should be a little soft when it comes out the oven but not completely mush. I like to tell more by look and feel rather than time

    Mina Ayoub tried this yesterday, the outside was cooked and tasted like some of the best macro friendly brownies I’ve ever had . The interior never set and was basically warm pudding, I think I just need to increase my cook time.

    You could try but I wouldn't sub it for yogurt. The yogurt is gonna give you a bread/cake consistency. idk how sensitive to the taste you are but I personally don't taste pumpkin in mine, if you see the proportions it's a tiny amount compared to how much chocolate/cocoa powder/protein powder there is.
