The meat is not fresh. Fresh meat is lite red but this is even grey on some places

First place wasn’t perfect but respectable technique. The 2nd place was WTF all wrong. Had to stop watching after that.

I agree. Was painful to watch those pork butts get cut in half. I guess to reduce cook time. Finished product looked damn good though. Killer plating in that black iron skillet. I didn’t finish the second either. Respect for their game though.
