Aloo Kadhi is a comforting and flavorful Indian dish made with potatoes (aloo) and a tangy yogurt-based sauce (kadhi). The sauce is thickened with gram flour (besan) and flavored with a blend of spices such as turmeric, cumin, and mustard seeds. Aloo Kadhi is known for its creamy texture, tangy taste, and the warmth of its spices, making it a popular choice for a hearty and satisfying meal.

Ingredients Quantity
Oil 1 tbsp
Asafoetida 1 tsp
Cumin seeds 1 tsp
Curry leaves 5-10 no
Fenugreek seeds ½ tsp
Black pepper crushed 1 tsp
Garlic chopped 1 tbsp
Ginger chopped 1 tbsp
Onion sliced 1 no
Curd 1 ½ cup
Gram flour 4 tbsp
Turmeric powder 1 tsp
Red chilli powder 1 tsp
Garam masala 1 tsp
Salt to taste
Water 1 liter
Green chilli chopped 3 no
Potato boiled & cubed 1 cup
Oil 1 tbsp
Dry red chilli 2 no
Asafoetida 1 tsp
Red chilli powder 1 tsp
Coriander powder 1 tbsp
Dry mango powder ½ tsp
Coriander chopped 1 tbsp
Coriander chopped for garnish
Method :-
1. Place a kadai on medium flame and heat oil.
2. Add asafoetida, cumin seeds, curry leaves, fenugreek seeds, crushed black pepper, chopped garlic and chopped ginger sauté for a few seconds.
3 .Add the sliced onions and sauté until they turn golden brown.
4. Take a large mixing bowl add curd, gram flour, turmeric powder, red chilli powder, garam masala and salt.
5. Add water whisk well to form a smooth, lump-free batter.
6. Add chopped green chilli and boiled potatoes mix well.
7. Reduce the heat to low and slowly add the yogurt-besan mixture to the kadai, stirring continuously to prevent curdling.
8. Place a kadai on medium flame and heat oil. Add dry red chilli, asafoetida, red chilli powder, coriander powder and dry mango powder mix well.
9. Add some kadhi in kadai and mix well, immediately pour the hot tempering over the prepared Aloo Kadhi.
10. Place a lid on top and cook for a minute until combined well.
11. Add freshly chopped coriander and mix well.
12. Now side out in serving bowl and garnish with chopped coriander.
13. Enjoy hot aloo kadhi with steamed rice, jeera rice, or chapatti.

Just to say hi very quickly: I am currently making "sweet mustard pickles" again. Cailiflower, onins, cucumber and stuff. A friend from England once told me that it tasted exactly like the knew it from back home. So I'm happy with that. He calls it picalilly. And I'm working on learning to make a decent mongolian beef. While beef will not be an option for you, I will also try this with lamb or deer. (I have a farm, growing deer around the corner in Ellerhoop, Germany.) I've found many recipes about it. this one came from Jason Farmer, explaining P.F.Chang's mongolian beef. Pls take a look. 2 things stand out to me: they are marinating the meat for 24hrs with baking soda (not baking powder!) to tenderize it. Then the are velveting it for another 24 hrs. No other recipe is describing that. Something for the "dancing chef": a few weeks ago I watched Michael Mills, here in Hamburg. Even got the chance to chat with him. (Ocasionally! No: "meet and greet", where you have to pay extra money.) And his swedish bassist. Who want's to learn spanish as a 3rd language. Super nice guys! Pls look for "How much for that dragon's tooth?" The Toehider. (His little daughter came up with that word.) He IS! playing all the instruments. Greetings again from the far north of Germany!

when the kadhi is warm then it might be thin but once it gets little cold it willb be thick..
