Thanks for sharing!! 🎉 In my humble opinion, it doesn't matter if the homemade tortillas aren't perfect. As long as they taste amazing, which I know they will cause you are making them, that's all that matters. Keep up the amazing work! With love, from Missouri!!

Tortillas are a staple at my house. We have enchiladas, soft tacos, quesadillas, tuna tacos, wraps; chicken or tuna salad, any lunch meat, cheese, left over meat, etc. as well as breakfast foods wraps. I’ve not once in over 25 years NOT had a a pkg and I’ve never thrown any away.
If I’m not feeling like rolling tortillas I do chicken enchilada casserole. Cut the tortillas into wedges and layer chicken (.59 cents a pound ) enchilada sauce, cheese and anything else you want to layer in like beans, diced tomatos. Bake at 350 until heated through and cheese is melted. I love that you teach people how to eat well on a tight budget. I know more people than ever are struggling just to eat.
As a single person this would be 12 meals for me! That is amazing. Thanks
Cheese is absolutely a necessity.

A tortilla press is basically used for corn tortillas. My Mexican mother in law rolled out her flour ones. And those weren't perfect either.
I think that's the biggest meal for less than $6 that I've ever seen! Awesome!
I am amazed you made enough food to feed a crowd with less than $6 🤗
Homemade tortillas may take more time to do, but at least you know they have good ingredients. Plus, they can be frozen as well.
As a Hispanic, I approve the tomato base from knorr for rice. Oh and if you aren't using wax, parchment or plastic wrap with the tortilla press, you'll break your tortillas. Hope that helps Brooke thank you love PS, I add a spoon or so of tomato sauce, or paste to mine. Jalapeño would be good, a few slivers of garlic. I know your doing 5 dollar dinners but I freeze my tomato paste in a spoon full and just add 1 to each batch. Also a great addition to taco meat. I freeze Jalapeño too. Chop it. Don't need much
For fun, I did through the Walmart app. I live in Fayetteville, NC. GV Brown Rice. .88 Chorizo. 1.34 Flour tortillas. 1.73 GV cheese. 1.77 GV ench/sauce. 1.00 The total before tax is $6.72. If I could make it work, I would especially with the sausage. However, if I absolutely HAD to, I'd skip the chorizo just so I could have more cheese, I'd do it. The total would be $5.38. Brooke, YOU ARE SO INSPIRING ❤
I make enchilada gravy , just a flour rue and chilli powder and water taste like regular enchilada sauce can season with anything you want

I ordered some online from Walmart. It is amazing! So much flavor❤
I did my own spin on what you made with the enchiladas sauce I used all pantry items and I used leftovers to throw it all together 😊I had leftover beans and ham 😋
Helpful hint from a long-time sub but first-time comment: Add btwn ¼-½ teaspoon of cumin (depending on amount of rice cooking or preference for the flavor) to the rice along with the tomato bouillon. I PROMISE YOU....the subtle hint of the cumin will really give it a more authentic Mexican rice flavor. Also, if y'all have it on hand, frying minced garlic WITH the uncooked rice in the oil will make this simple rice recipe absolutely **chef's kiss** yummy. The difference is subtle but enough of a gamechanger that you'll always make it this way. Hugs and high-five's for all the froogs out here doing the best we can with what we have ❤.

I worked for a while traveling 6 days a week & was blessed with a large expense account for meals. But when I came home I always made refried beans, mexican rice, usually added ground beef, to the beans. From there I made tostadas, burritos, cheese crisps & anything else I felt like. Topped them with lettuce, tomatoes & whatever other veggies I felt like. It always hit the spot & after eating out for a week I craved these simple ingredients, they are my favorite comfort foods.
Wow that looks delicious. We are doing this recipe. Our budget is so tight now . The struggle is real. This recipe helps us out big time. Thank you Thank you. We appreciate you so much. 😊

Bestie! Fortunately I am blessed and could have gone all out for Easter, but your poor man’s chicken casserole sounded so good AND I already had all the ingredients, also had fresh broccoli. Only had to buy Knorr rice, but only found pasta & broccoli, using your advice, I used what I had and made it my own. Had the corn but needed cream cheese. So all I had to buy was Knorr pasta mix and cream cheese. Let me tell you, dinner was a HIT. Had the orange Koolade pie for dessert. Gave credit to you. Much love for the inspiration. Thanks❤❤

Mexico food wasn't a staple when I was growing up. My daughter came from camp, and they put peanutbutter, granola, and honey. Then roll up, pretty good traveling snack. Another thing was to cook onions until transparent, add some bbq sauce, add cucumbers' cut length ways, and salad fix dressing.
Agree! Always add that powder to my rice. Delious! Must have for Mexican rice.

Ok...when you got the green enchilada sauce... reminded me of a cheap meal we used to buy when we were teenagers to make our allowance stretch... bean burritos with green sauce. It basically consisted of tortillas, refried beans (can make your own out of dried pintos), green sauce and a little cheese.
Love this, you and Ryder, for picking this meal! Blessings 10x to you, Brooke! 💚💙💜

I really enjoy watching you. I learn alot.. ty...I buy big can of Hanover Green Beans, potatoes and bacon. Just put a few slices of the raw bacon right in the pot. Add enough water to cover it all.. its one of my favorite" One Bowl Meals". I throw in can of shoepeg corn also when i have it. Salt,pepper,butter.. omg! Its what my family expects from me for holidays.. its funny.. For years everybody thought i made fresh beans.. its good.
I cover each side of the tortilla press with a ziplock bag. I spray a little Pam on each in the beginning to help from sticking!
