I buy Ronaldi’s when it’s $1. Dump in a sauce pan, add a jar of water. Let it simmer on low for about an hour, add more water if it thickens too much. Bake my chicken coated in breadcrumbs and parm. I make spaghetti to go with it. Hubs (gram from Italy) loves it. Last time I found some half price ravioli with cheese and spinach I served it with!

long time lurking, first time commenting... I'd like to see a slightly different type of "budget" meal... you mentioned a while back (sorry, I'm still catching up on months old videos cause I'm busy) that even fast food places like Chipotle can be $75 plus for your family and I totally agree that those prices are out of control these days. while I have some disposable income, they still make my the head spin! so my request is, what can you do with $50 for a really special occasion single dinner for your family of 5? I'm thinking special birthday, Valentine's, anniversary, congratulations on getting into college, etc. NOT Thanksgiving, Christmas, Easter, etc that might include a bunch of extra people. Just a really, really special day!!

  • @CarrieVukich

basically somewhere that a "traditional fancy pants" meal that may have been $75-$100 for a SUPER extravagant night before COVID and the resulting inflation but would now run into the $200-$300 mark. I know this is a bit out of your wheelhouse, but sometimes we just need to celebrate. I figured $10 per person was reasonable for a super celebration since that's still cheaper than a Chipotle burrito/bowl or a McDonald's big Mac/quarter pounder "value" meal.

Rao’s tends to be salty. I’m Italian and while it’s good for the fresh olive oil taste and fresh sweet tomatoes, I can live without it and doctor up sauces or just fry down tomatoes 🍅 myself and not even crushing them I add to spaghetti, I agree not to rain on anyone’s parade. Plus affordability is important.

Egg salad on celery sticks is so yummy! Great for summer when it is hot and it is hard to eat a lot of bread. I have also filled up small romaine lettuce leaves with egg salad and ate it like a taco. So good.

I always enjoy your videos, Brooke. It creates so much nostalgia for home! (I keep waiting on the day I log on here and you have found a recipe for a valleydale hotdog chili--the kind in the giant roll. In sw VA, we all loved it so much!)

I like to freeze excess eggs. I scramble them with an immersion blender first. 1/4 cup of scrambled eggs equals about 1 large egg. So easy to thaw and flawlessly use for baking, scrambled eggs/omelettes/quiches/frittatas, etc.

love it! Presently, my teen son is on Spring break away on a family visit so I am cooking just for two mac and cheese , egg cheese salami breakfast sandwiches deli sandwiches, hot corned beef sandwiches korean beef rice bowls and soup and grilled cheese this week -- plus! I got to go out for Thai food this week on a date night.

Black beans are my favourite too, but thanks to you, I’ve been eating beans - pintos, black or garbanzo at least once a week. I even had soup beans and cornbread a few times, inspired by you. I was thinking of you this weekend when I made up my beef and broccoli. It’s your recipe except I always forget to add sugar. I don’t seem to miss it, though! I like your new biscuit cutter. Fancy! 💖

Brooke if you put your corn in a shall I w baking dish in a 1/2 inch of water, cover w/plastic wrap (vent one corner) and microwave for 5 minutes it is ready. Faster than boiling in the stove also works for steaming asparagus.

I'm not a Rao sauce fan. Definitely can't justify the price. Even when it's on sale. Sale price is usually still ridiculous.

See Mindy Mom does a green bean with olive oil or butter, bread crumbs and parmesan that Ky might like, and seems would go excellently with your chicken parm. I may have to try your green beans, too. Ranch adds a very nice flavor to vegetables.
