Please don't feel bad about the cabinets, fridge, or freezer being disorganized. I think that, as frugal people who try to use as much as we can and not waste it, we tend to have a lot of half-packages of foods after a while, and they can be funny-shaped. Plus, we are generally busy with kids, work, chores, so things are going to be a bit hap-hazard at times. I like real life. I can relate to real life. I cannot relate to perfection.

I used to think I had to follow recipes but cooking frugally is cheaper, less waste, and uses your brain to see what you can make with what you have. I passed on adding apples to noodles that my brain had thought of. Apple cake would have been nice though.😅

I slow cooked chicken thighs in the crock pot over the weekend then shredded it. Yesterday I used some of the shredded chicken, cooked stovetop stuffing, cream of chicken, cream of mushroom, chopped steamed (microwave) broccoli, and a little bit of Worcestershire sauce. Mixed it all up together and baked it. Didn’t even have to use any shredded cheese. It turned out so good. Not healthy but it fed everyone (I have 4 sons) plus some leftovers for lunch today.

Once covid/stay at home happened and then some shelves started being emptied, I had food inventory lists going and kept track of what I ate everyday. I'd fry or scramble a dozen or more eggs and freeze them. I got powdered milk and Anthony's powdered cheese (just real cheese that is dried and powdered) in case fresh cheese and milk wasnt available. Got to the point, I realized I had plenty on hand. We had had a 20% pay cut with covid so I tried going for how long without buying groceries. I went a month and a half before I decided to go get fresh stuff, but helped on budget! All those sale things we get to save money end up costing money if we dont end up using it and have to toss it.

FYI...Someone turned me on to a great tip years ago. She said if I have stale crackers, chips or cereal to just spread them out on a cookie sheet and bake at 200 degrees for 20 to 30 minutes, let cool and place in a ziploc baggie. I have saved so many stale items this way and I love it. My kids have never learned the habit of closing any bag in their entire lives. Also I take stale bread, rolls, etc. and spray the inside of a paper lunch bag and heat them up the same way. I hope this helps you out.

Fortunately, I live in a one-story house but in September 2021, I did manage to slip on a patch of water on my kitchen floor, flew across the kitchen and slammed my left humerus on the lower cabinet and fell onto the floor and shattered my right kneecap. Two surgeries (and a plate in my arm), two months in a rehab facility, six months with an ankle to thigh knee immobilizer and I've learned to be extra careful how and where I walk now.

Just so you know, if you have stale chips/crackers you don’t have to throw them away! Put them on a baking sheet, put them in an oven that has been warmed to 350 degrees. Bake for 5 minutes and take out and dump onto another baking sheet that has a single layer of paper towels on it. (It prevents condensation as it cools.) let it cool completely which normally only takes 5 minutes. Check to see if as crispy as you want. If not, repeat the process. So easy and no more wasted crackers and chips!

If friends or family comes over and I have a good amount of eggs, I used to make deviled eggs. Everyone likes a good deviled egg. I like the meals you are throwing together! Always filling, always looks tasty even if something is not looking perfect. You are real and lovely! ❤ (just a tip here bc I noticed not all of your boys likes cooked onions: thickener and a seasoning authentically, so I usually cook them to death like brown em as I like, and then add a little water time to time and cook it down. Repeat until I can not see any pieces of onions. no one ever gonna notice I used any but the flavor and the thick texture is there. it is something like that tubed onion you have there in the U.S but I guess it tastes a bit better bc of the browning process)

Hi Brooke, hope all is well for you and your family. Loving your videos. What I love is creating meals with what you have. It is a challenge, but wow when creating amazing meals taste so good. Who would have thought. I love your ideas and have written a lot of your meal ideas. Need to really budget at the end of the month. Thanks for sharing your wonderful ideas. ❤Hugs to you and your beautiful family. Big Hugs. Let the cooking ideas begin. I know you can do it. I can see a pork stir fry there, with garlic bread on the side. I did the same, looking in the fridge freezer and our small stand up freezer. There are a lot of meals there. Homemade soup, stir fry pulled chicken, chicken macroni with cheese and onions and peppers.

Sure hope your injury is healing well. In Culinary school, we used to dilute sour cream with milk to make it the consistency of the Mexican Crema for drizzling. Also, to keep the cutting board from sliding, a wet paper towel or wet towel underneath will help😊

Hi Brook, I just found you and subscribed. I watched your blessing box video and immediately went to your channel This is my second video and you're great!! One tip would be to use a towel under your cutting board and then it won't slide. I'm looking forward to watching more!!

I think the garlic powder, onion powder, and paprika are the original three too. I do this about once a week, and it keeps down the mess down in the freezer. I think it saves money too. I just found your channel and I love it.

I am new to your channel. Im a Southern Momma living in the Rockies for over 20 years and you and your channel are helping me return to my roots and foods my own Momma used to make. Thank you for inspiring me to live simply and make do! Your boys are so sweet and lucky to have such a good-cookin Momma! I whipped up a meatloaf and mashed potatas for my son unexpectedly this week and he was as excited and sweet and appreciative as yours are! Totally made me happy and smile 😊! TY for being genuine and showing us its not that hard to make it happen!
