Some of us "Muricans" love garlic and loud onions.
We Puerto ricans use this for our everyday cooking ,but green pepper,and onions are added to it without the vinegar and we call it sofrito. This is quite lovely.

Fun fact. Cilantro is the spanish word. English word is Coriander. I am so glad I found your page. As a mexican growing up eating Middle Eastern food, I had been looking for the kidney bean curry, and that's how I found you, which led me to this video!

This sauce reminds me of the 1990s - Afghani chipswalla use to add this sauce to French fries and then sell them in small newspaper bags! Memories. I had the same sauce with fries in downtown Kabul during the American occupation!

I made a 1/8 recipe of this a couple of days ago to try it out and it turned out good. Mine was slightly thinner than I would have liked it, but the flavor was so amazing. I shall make a larger batch next time. I have a co-worker who is from Afghanistan and she brought some chicken kebabs with chutney that she made for us to try and I enjoyed those so now I am trying out some recipes at home. Your channel was one of the first ones that I found. I will try some of your other recipes.

You should refrigerate it and keep it in the fridge and I’ve never had it go bad. It came keep for a long time.

In the fridge I’m sorry it took so long to respond - and it can keep for a good long time. Start with a small amount to see how you like it.

For sure. this is a skill that's taken an lot of time for me to perfect - not burning the coloring is tricky for me!
Do you ever use herbs other than cilantro? I may try substituting parsley for the cilantro. Or later this summer when I have more chives than I know what to do with, substituting chives for both the cilantro and the garlic.

Yes - in fact I have a video where I call myself parsley bae! I would not use chives because that’s more in the onion family than parsley/cilantro. You can use oregano also.

Hi! Great video. A Afghan friend made this recipe with pecans. Is that called something else ? BTW, Americans from the South LOVE fresh onions and some love hot foods. We go through pounds of fresh onions all the time. Growing up we routinely had fresh onions and hot pepper sauce on the table!!

Interesting recipe , reminds me of relish. About Zoroastrianism, it does not originate in Afghanistan or Bactria , the Urheimat for it is in the region of the Gorgan plains of NE Iran into Turkmenistan , where the Yaz culture develops, this is based on Lhuillier's and Vinodagrova's research as well. Afghanistan in the Iron Age was largely composed of distinctive East Iranic religious cults one in Bactria and one which looks like that of Proto Pashtuns in the Kandahar-Balochistan corridor, later you have Hellenic influences and back fed Zoroastrianism via Achaemenids but for the most part in terms of archaeology from the late Iron Age to the early Medieval period, Buddhism has a gigantic influence in transforming the society and leads to urbanism patronized by Bactrian Greeks and later Nomadic groups like Sakas and Kushans. The second major transformation occurs in the 11th-12th century, with Persianization and Islamicization, this leads to the disappearance of Buddhism as well as the Bactrian language ie the sister language of Pashto and former lingua franca , with the exception of Eastern Afghanistan (Laghman/Kunar/Ningarhar) where Gandahari and other Dardic languages were the lingua franca.

It never lasts too long in our house but you can keep it for up to a month.

Honestly I’ve never known anyone to throw it out. Just keep it stored tightly in the fridge and it should be good for a month at least.

@@AfghanCooks Also the liberal amount of vinegar helps to keep it from spoiling quickly.
This sauce is perfect to add to singari fish: I always add plenty of green chillies. Butterfly the whole fish (sea bass is great), lay the fish on an oiled oven tray, cover with this sauce, add slices of tomatoes, raw sliced onions and grated carrot, then grill until cooked through and don't be scared to slightly burn the edges of the onions and tomatoes. It's not Afghan, but it is Middle Eastern and it's my favourite way to eat fish. Edit: Oops, I forgot, you also need to add slices of lemon on the fish.

I don't think it is more authentic but probably just the way a family or a tribe or location does it. We all just do what we see our ancestors do. We didn't put nuts in it but I can imagine putting pine nuts for a sort of Afghan pesto!

How to come to US and Canada my whole family lives are in danger because talibans are after us eventhough I am pushtoon and talibans too.
Calling it a chutney than sauce all afghan restaurants call it chutney just ruined the name of chutney with sauce 😮
Too much out of context talking. I know you can speak English, try to focus on your content and keep it formal as you are adding items to ur recipe. Rather than bullshiting about nowroz and alot of other crabs. You came to US, changed your tone of speaking and style. At least focus on your exact recipe. Thank you. I mean no harm. 2 cups is nearly 500ml apparently and yet a cup of butter is 110grams. What's wrong with mentioning oz and or grams/millilitres instead of cups?? Helpful understandable measurements would've been 100 times better, but instead you decide to bore me with making a blended sauce for 8mins full of cringey behaviour... The best content creators will have explained a proper meal in 8minutes, with all ingredients shown in understandable measurement and cooking instructions. No wonder this has so little views...
