    The moment he mentioned they have Lebanese wine I knew he would pick out a Musar and describe it as a personal favorite. That winery is legendary. Sad so much of their stocks were lost in the Beirut explosion.

    Every time I see a wine cellar like this I think of Porthos of the Three Musketeers holed up in the wine cellars drunk out of his mind. Imagine the damage he could to this wine cellar!

    Now you tell me you're in Torino ?? I've been in Torino last week, wonderful city, good food everywhere, had so many Barbaresco, Barolo, Amarone, & Prosecco in the afternoons, of course. Next time i'll look for Del Cambio.

    Its too preserve the labels from being damaged by moisture or fungus. Even though old labels may look cool it often decreases the value of a wine bottle when the label is damaged

    Did you notice? All the most expensive bottles are stored crosswise, so that they may easily roll out of the shelf and break on the stone floor.

    It’s a high turnover cellar in a restaurant. He said in the video they are going through 1-2k bottles per month. With their stocks they would deplete the cellar in a couple years, so if anything they need to keep buying bottles to meet demand.

    That’s not how it works for somms. They try most all of the wines, it’s their job. And somms have access to fine wines outside of the standard retail/restaurant model.

    No, most of these are built to last many decades. And most will probably be consumed within a year or two anyways.
