The Traditional Sichuan Cuisine is one of the most diverse Cuisines in the World, which we would like to introduce to you today in this „Traditional Sichuan Cuisine“ Episode in Berlin Germany.
The Traditional Sichuan Cuisine is in this case the Taste of Chengdu - the Capital of the Region Sichuan. The Chefs prepare Sichuan Beef Noodles with large, juicy pieces of beef in the house's Hot Pot Sauce. You can get this Dish in every Noodle Shop in Chengdu - and in Berlin at LIU Nudelhaus. And many other delicious Dishes with traditional ingredients such as Sichuan Pepper, Red and Green Chilies, Coriander, Garlic and Bean Sprouts, authentically prepared in Chili Oil, with Sesame Paste and Soy Sauce.

When making Beef Tallow, the pure fatty tissue of cattle is melted out. The taste is more intense and better than with vegetable fat. It smokes little because it has a particularly high smoke point of 220 °C and has a very long shelf life.

    Wow. Danke Moodi Foodi, das Video ist einfach großartig geworden. 🥰 @allGastronomen. Lasst die Jungs zu euch in die Küche! Es ist unglaubliche Bereicherung seine Arbeit in einen solchen Format teilen zu dürfen. Ein paar Geheimnisse bleiben uns zum Glück noch. Die Jungs sind auch sehr respektvoll wenn nicht alle rezepte dann gezeigt werden soll. 😋 Die Jungs waren an 2 Tagen für ca. 13h bei uns Vorort. Für den Hotpotdreh haben wir allein die Hälfte der Zeit gebraucht. Olaf war fast von Anfang bis Ende dabei. Super happy, dass die Arbeit hinter der Herstellung von Feuertopfsauce mal dokumentiert wurde. Der Rest ist ja Bonus.😁 Vielen Dank.🥰

    Alles schön und gut, aber hygienisch ist das ja schon deutlich ausbaufähig. Offene Verpackungen und Schmutz wohin man schaut, datumsangaben? Ich würde dort nicht essen gehen.

    在国外能吃到这么地道的四川美食,品种丰富,货真价实,令人艳羡。相信德国是一个讲究的国度,我给你们一个小小的建议哈:你们为方便客人正确的吃上面条,要提前替客人拌一下面条,那么,厨房可以专门备用一个碗来拌面条,然后,再小心的倒入客人的面条碗里,尽量让端到客人面前的面条和餐具都更美观和整洁一些,这样岂不更好。仅供参考。祝生意兴隆。

    Side effect of goodwill. 😊 The bowls are made by a Sichuan Company using biomaterials (like bamboo) one of the downsides is that during the cleaning process, they are exposed to great heat which gives them after time a more darkish color. In these bowls we already served around 400K meals we love them and replace them regularly still we prefer unappealing bio-material bowls over some plastic wonder products.

    Creo que por mera utilidad, el español es muchísimo más útil que el italiano. El italiano sólo lo hablan los italianos y el español, aparte de España, lo habla la comunidad Hispanoamericana, bastante en USA , Filipinas, Guinea Ecuatorial, Israel y demás. No te autolimites a una comunidad tan pequeña. Meditalo. Es estupendo que te siga un guineano, un español, un peruano, un salvadoreño o un tejano.     Interessante Informationen die Einblicke in die "Akkordarbeit" einer auf Massenproduktion ausgelegte Küche bietet. Die allerdings nicht viel Wert auf Hygiene zu legen scheint. Wobei ich denke, dass man besser nicht den Blick in die Küche von Restaurants werfen sollte.😉

    Dein zwinkern hat einfach getriggert. Bei uns siehst du es auszugsweise wie in der busy Küche läuft, obwohl am Drehtag war es recht ruhig und es kamen nur ca 290 Gäste in 3,5h Mittagszeit. Unser zuständiges Gesundheitsamt ist über die Jahre mit uns sehr zufrieden (sollten wir vielleicht mal öffentlich aushängen😄). Ein Chiliölfleck hier ein paar Frühlingszwiebeln da sind nicht die Problemfelder. In einer Küche wird nunmal gearbeitet. Schlechte Zulieferer, fehlende HAPPC, falsche und oftmals überlange Lagerung von Fleisch, Gemüse, etc. ... Wird sind sehr picky in der Qualität unserer Lebensmitteleinkäufe, so kaufen wir tagesfrisch Fleisch und Gemüse. Trotz des täglichen Ansturms hat unsere Küche ein gute Struktur für die konstante & gründliche Reinigung ihres Arbeitsbereiches nach klaren hygieneischen Standards.

    DIe Chinesische Kueche ist eben so, "Akkordarbeit" weil man schnell sein Gericht haben will. Solche usammenarbeit nennt man "Prep." Ausser der Pommesbude kann man nicht alleine in einer Grosskueche arbeiten. Vielleicht ware es auch besser, nicht immer die Kommentare zu lesen. Uebrigens gibt es auch genug Videos auf KZread wo man in internationale Kuechen hineinschauen kann. 😜

    @@sigiloXXX Dankeschön🥰. In Barca gibt es ein paar solide Sichuan Restaurants. In Spanien wird entweder nicht so streng kontrolliert bzw. haben die andere Einfuhrbestimmungen. Die können viel mehr geile chin. Spezialitäten importieren als hier in Dt.

    gloves are more to protect your hands from gettin dirty. u can grab in things you dont want to have in ur food even with gloves. cleaning hands often protects ur food, not wearing gloves.

    there are many cuts in the video so you can't see them washing their hands before for example cutting veggies and meat. Meat also goes in a pot to cook for hours. the answer given here before is also true. Hands washing is the still most effective as we all learned in 2020 😅

    Not to mention, the people involved might not always wear nail colors in the first place. Most people in China in the old days never decorated their nails and only kept them clean cut and trimmed, because of the labor in making food, etc. Only the rich elites could wear decorated nails back in the day, because they almost never cooked or did these tasks. When I worked in the kitchen with my mother, we were constantly told to wash our hands thoroughly, even under the nails. Every hand on deck had to be ready to touch food because they were already washed and dried to the point of being as clean as possible. We also didn't have the habit of wearing lotion, so our hands were always extremely dry, never oily. Hence why we can often touch flour and so forth to make dumplings, etc.

    @@TomdaBerlin ja, es gibt drei Schärfegrade mit roten Chilichoten auf der Menütafel gekennzeichnet. Die niedrigste ist würzig-Pikant, aber so gut wie nicht scharf.😋👍

    Some of the Bowls on the inside looks unwashed and unappealing to eat out of. Or is it by design? Clean up or get rid of it.....

    The bowls are made by a Sichuan Company using biomaterials (like bamboo) one of the downsides is that during the cleaning process, they are exposed to great heat which gives them after time a more darkish color. In these bowls we already served around 400K meals we love them and replace them regularly still we prefer unappealing bio-material bowls over some plastic wonder products ☺

    Our opinion: Gloves are not used in Star Restaurants. If regular hygiene is correct, then you don't need gloves. If hygiene isn't right, gloves won't help. ;) You can assume that we only show locations on our channel where the hygiene is perfect✌️

    Yeah its rush hour. Many hungry people wait to quickly get LIU's food. German lunchbreaks are real short. Guess you have a point but still its all perspective.

    DIDN'T THINK much of the preparation of the individual bowls. - PUT ALL the ingredients into the dish on top of each other, ADD hot soup and serve, - NOT my idea of a nicely mixed and appetizingly served meal. - IT seemed quantity over quality was ALL the proprietors were interested in.👎👎.
