Actually the pork is not fermented. The pork just gets its reddish colour from the fermented tofu i.e. the sauce. The red fermented tofu has very strong colour and flavour. The secret is the usage of Monascus purpureus, a kind of fungi in the fermentation. Because the fungi can produce harmful toxin it is now quite debatable in western world in the safe use of the fungi.

Made it halved last night. It was good and solid. Cooked up nice and had a strong red bean taste. Definitely a future recipe. I call it an appetizer because I don't think I would want to eat a lot of it.

I'm saving this video. Even though I don't deep fry anything I do have a wok and I would give this method a try. I buy the Costco pork belly occasionally and I usually air fry the pieces. Apparently my pieces are too think according to this video because they seem to turn into little meat knobs. I tried baking them and it was not good at all because of the meat cooks faster than the fat. But my air fryer never really gets that nice crunchy skin on it either. Sort of, meh. So I'll keep this in mind for the next time. I will need to pick up a few ingredients from the local H-Mart but they should be easy enough to find. Thanks you for the video. They are really great!

he was using store-bought, majority of chinese people use store-bought fermented tofu, we don't make our own

What luck! I just bought some pork belly on sale! This is the only time of year people eat it in Norway, so I'm looking forward to trying this! What other things would go well with it? Rice? Some kind of sauce? Or does the marinade do all the heavy lifting?

What kind of cooking stove do you use in the video, and is there any concerns about fumes? I love my induction stove, but I can never get it hot enough, nor does the heat wrap around like a flame stove!
