Her recipe is 1 kg little red chili, 500 gm green chili 2:1, wash and wind dry then put in chopper to chop with 100 gm garlic, 100 gm ginger. Then add in 30 gm salt, 30 gm sugar, 50 gm toasted sesame seeds, 20 ml cooking wine or Chinese White wine. Aroma oil -- 1 onion, 4 star anise, 3 bay leaves, 1 Tabsp Sichuang red pepper corns, 3 inches cinnamon stick, all fry to golden and drain boiling oil into the prepared chili. Can keep 1 year in the fridge. I will add in 500 gm garlic, 100 gm ginger ,but will pour all into the drained boiling oil to fry until boiling for 2-4 mins then season to taste, more salt, off the fire. So that it can last long. The oil most be a lot to cover all the chili so that the chili will not rot.

我覺得會有問題.用熱油嗆一下生辣椒.是不夠的.還有殘餘的水氣在.發霉臭酸的幾率很高....

炸干了辣椒但不要糊。我的经验是,炸至微变色然后用冰水降温防止辣椒糊了。

It's exactly looks like our south indian culture. Actually we use chilli powder instead of direct chilli. However I will try this. But we people are using long back not 50 years ago.. I think u too must be using this long dated because u people copy most of things.. Good go on..

Hola, amigo..... 2 libras de chiles rojos, 1 libra de jalapeños, lavar, secar, 100 g de ajo, 100 g de jengibre, 30 g de sal, 30 g de azúcar, 50 g de sésamo blanco, 20 ml de tequila (!!), mezclar; para la sartén ... aceite de maíz, cebolla, mircia, pimienta, anís estrellado, Cinnamomum cassia. Puede durar un año en lata.
