Well done. A few minor and friendly tips. Spanakopita: Yes, Ricotta is a No, No, but it's okay if can't find the original Greek cream cheese. Eggs is a must. Gyros: The original Greek gyros is with pork meat. Moussaka: Bake the potato and eggplant. Better taste and not that greasy. Tzatziki: Better put two cloves of garlic, unless you have a hot date afterwards 😅

Eggs not necessary when recipe has cheeses. Cheese can be the binder.

Hi!! Wow!! Are you greek? My absolute favorite was the tzatziki. I can eat kilos of tzatziki! When you made the tzatziki, why did you add vinegar to the grated cucumber? Thank you! Best wishes for a good evening!

Hi, I am not greek but I love greek food. Adding vinegar to grated cucumber in tzatziki enhances flavor, softens the cucumber, and helps extract excess moisture, ensuring a thicker, creamier texture. It also adds a slight tang that complements the yogurt and garlic.

The spanakopita recipe is not an authentic recipe. Ricotta cheese in spanakopita is a no no. Ricotta in greek cuisine? It's an Italian cheese. Spinach and onions are raw not cooked (also no nutmeg, please) and what they usually do to counteract the water from the greens is to add a little bit of bulgur or trahanas or rice. Also they add egg (1 or 2 depending on quantity). And for the phyllo, if you want to go really authentic you open it yourself like our mothers and grandmothers used to do, 2 on the bottom, 2 on top, and the corners you roll them like a cord towards the edge of the pan.

I guess ricotta is his substitute for ανθότυρο (anthótiro)..

@@propre21 probably, but spanakopita is with feta cheese not a mix of cheeses. This is cucina povera, recipes that were fulfilling with very few ingredients made from people with very limited resources.

Instead of ricotta, Greeks use Anthotyro which is the Greek version of ricotta (tastes same), but most non-Greeks are unfamiliar with anthotyro. You can also use a combination of ricotta, feta & cottage cheese and add, or not, fennel. okay? I'm Greek.

@@cyclonicsquid4189So, if you can afford feta at $15.00 a pound these days, go right ahead... but blame the cook if it comes out too salty. lol.

Food should bring people together, not separate them. Unfortunately, some people are just looking for a reason for spreading hate and fanaticism. Good bye 👋

@@TheCookingFoodie You must first understand what you read. What I say is one thing, what you say is different. Food has a culture, there is a cuisine to which the food belongs. If food brings people together, you won't call Turkish food Greek Food. These are Turkish Food. You are the one spreading hatred by giving false information, not me! I defend the truth. You have no knowledge, you just have an opinion. Now good bye to you, okay? GOOD BYE👋🏻👋🏻👋🏻
