You missed my favorite... canning. I dry some, but root cellaring is not an option in the hot wet South and freezing is almost as bad. Hurricanes leave us without power.

I have better luck with sand as a medium then garden soil do to bugs in the soil.

Thanks for the tips. I've had excellent results freezing chopped onions with this method. I freeze garlic in a nice cube tray with a little olive oil,.then bag the cubes. I've read you have to blanch the carrots; how long have you stored yours without blanching?

Great video. Just got back from buying my second dehydrator. How much powdered garlic is equivalent to a clove?
