    Hi Calikim, you are so awesome! As a fellow Californian, I really am happy to enjoy growing a garden even in the winter and that you can make ways to make that possible. :] What part of California do you live in Calikim? :] The cool season flower idea also sounds great! I am wanting to lose weight and get healthier, as I am prone to getting diabetes. I am also an avid Gardner myself here in Northern California and you always give me such great ideas that I can garden too and ones I didn't even think possible! I really love all these recipes you've posted here, I have been wanting to find some healthy recipes recently and am so glad to have stumbled upon this recipe video on my recommended webpage :]. I am defintally going to try these recipes, especially the lunch one sounds very yummy and wholesome with the Swiss chard! :] I think I will try the Swiss chard instead of the bread for the sandwich wrap as well.     We haven’t had a freeze here in Dallas yet, but I have my indoor garden planted under grow lights in a bedroom closet. Every morning it is such a joy to walk in and turn on the grow lights and have spring bursting forth on my shelves: lettuce, micro greens, kale, basil, dill, on and on. And most exciting of all, today my Tiny Tim tomatoes are peeking through!

    I grabbed a 6 tier 48"x18" rack during Covid (half for grow racks, half for storage), and it was a godsend for homemade greens when the shelves were bare. Now im using to get an early jumpstart my garden, to increase my growing season. Its awesome. Shelving tips: 1) Ive found it helpful to have 2 different shelf heights for my microgreens and potted seedlings. 12" is plenty for shallow trays of microgreen and seed starter plugs (the shelves in this vid look compatible with std 1010 trays). I ziptie my lights snug to the shelf above, to avoid wasting vertical space. 18" is great for small step-up pots eventually bound for the garden (2.5", 3", 18oz solo cups, and even 5" pots all work) 3) The seville classic shelves are great (BTW, save $$$ by ordering direct instead of thru amazon) but they often have a slightly raised lip (bottom welded) which can be annoying if you use standard shallow trays that overhang slightly, causing the middles to sag slightly. Easily fixed by unfolding a large cardboard box (2mm thick), and cutting it to fit just inside the lip ... no more sagging. If you line the underside with aluminun foil, it even reflects indirect light downward to the rack below, imroving lighting efficiency. Oh, and fitted clear plastic shelf liners will help catch seed hulls, dirt, and water splatters for easy cleanup. Last, I rigged my grow lights with a timer (I use 17 day 7 night), and rigged a silent usb fan for airflow.

    @@CaliKim29 You're very welcome. "On the Grow" has several helpful vids on rack setup. BTW, as an example of overhang/sag ... although I mostly use 1010 shallow trays, I sometimes use multiple 1020 shallow trays. My shelves are 48w x 18d, so that means I can comfortably fit four 1010s side by side, or two 1020s end to end, without overhang, but if I wanteed to I could double the 1010s into 2 rows of 4, or the 1020s into four side by side, with a 1" overhang in both the front and rear . . . that's where rigging a cardboard liners helps prevent sagging. Sagging causes uneven bottom watering, and thus uneven growth. On a related note, being able to double up like that, if I need to, is why I spent extra to ensure my lighting was as even as possible across the entire shelf ... which is why a single troffer light on damgly chains might not be the most efficient option. I went with high efficiency full spectrum LED strip lights ... either 2 (or better still 3) full length lights per shelf. With a shallower rack, 2 would be best. Sorry to babble ... im retired, and have too much time on my hands. Cheers.

    Thank you for the reminder about micro greens. I used to grow them then I got out of the habit of doing so. But you are absolutely right. They are easy to grow easy to maintain and packed full of flavor. I am most definitely going to grow some micro greens this year. By the way them Swiss chard wraps look delicious. I’m definitely going to try that.

    Hi Kim! My questions have nothing to do with this video, but here goes. Are you covering your veggies at night if it goes below 30 degrees? I live in Thousand Oaks, CA. My other question is about the collard greens. I think an insect has munched on a few leaves. Can I use the organic neem spray on them? Thank you!

    It's good to give those who are new to eating microgreens some ideas of ways to eat them. That dinner salad was an appetizer size portion though. You should each be eating the equivalent of a whole head of lettuce or 1 - 2 pounds or probably 4-6 times what you had on that plate as far as greens and veggies went (the cheese and cooked beans don't need to be increased) just for you... if you want to keep it healthy. To stay healthy we all need FIBER WHICH WE ONLY GET FROM RAW FRUIT AND RAW VEGGIES AND TENDER GREENS - which are the microgreens and lettuce. I would have the eggs and meat once a month for a treat since they are so fatty and mucus producing and acid forming.
