HK is such a fantastic place for food, bars, and drinking. Great whiskey and wine bars. Great seafood places on lamma and Kowloon ...Miss HK and hope to visit soon.

The smoke coming off the receipt was fresh from getting burnt on the price, I mean I can flip a burger 35 times in style while it cooks n throw some seasoning on too but nobody's gon pay me 100 bucks for it

I want one of those jet engine wok thingys. And some people to do all the prep.
There is a reason why it's not greasy: bare frying vs those common fools that love using starch to deep fry/soak up oil (reusing oil to fry more that's why the starch vs a couple of times and discard with master chefs.). Master chef this level have total control of the oil not too much not too little.

Wow. Batter on the beef cheeks. I don't know about lobster or fish, for lunch. Crispy beef cheek, fried, looks really yummy. If you're going to go Chinese, and you want the yummiest, go Cant'nese. I remember eating Chinese in the 70's, at restaurants with the poopoo platter and huge scorpion bowls. Cantonese is the authentic take on sweet n sour and hot and sour and hot and sweet, and chicken fingers. First time I ate Cantonese in Hong Kong, the sweet and sour pork was so good, but it had a cockroach in it. My sister returned the dish and the waiter came back with a steaming hot sweet and sour pork and it had another cockroach. I didn't want a scene and have to leave this great restaurant, so I just kept my head and eyes down and started scooping the pork onto my plate. That's how good Cantonese in Hong Kong is. You know? Cockroach? The food is so good, it doesn't matter.

I recall once splashing out $300 for a buffet sized seafood main and table side cooked steak Dianne in Surfers Paradise in 1980. That was a weekly wage back then. Crazy Mahn.

Depending on what restaurant you dine @ .. in NYC probably over $300 plus !! Lol you didn’t even add on your cocktails 🍸 & gratuity yet & your gas & tolls coming into city .. let’s just say bring credit card or plenty of cash 💵😃

Wok with handle is thai or southeast asian tool. Funny thing is some italian start using it for pasta ~
This is real gourmet Cantonese food. $50 fried rice is still just fried rice to many, but this could be eye opening for those who've only had the bastardized versions of Chinese food in other countries. And no, all that oil doesn't make the dishes greasy.

You think these Michelin starred restaurants in Hong Kong invented fried rice and every place else is a bastardized version? Where do you think all those chefs in other countries are from and learned to cook anyway? It's fried rice. It's a simple dish. Rice, egg, a few veggies, maybe a bit of soy and/or Oyster sauce and the protein of your choice if required. The only thing that's eye opening is how similar their cooking technique looks to every other chef I've ever seen making Cantonese dishes.

He could yao the fish filet in hot oil before or after he fried the fish bone. But, he chose to do separately. The high end Chinese food needs a lot of unnecessary steps. It is fun and amazing to watch.

It's the oil. He separate fried oil from new oil & flavored oil. So the food will bear it's greater distinct.
