He could have used a machine to knee the dough,is it tradition?.he could have gone more faster

Levyn KHS from what I’ve heard apparently it is completely different than machine pulled. I don’t know myself but I don’t think it’s just tradition even though it has a part.

@@levynkhs8820 Im no expert but I ate a lot of these, both machine pulled and hand-made in Korea. In my opinion, hand made noodles have much better texture than the machine made. Unfortunately, a lot of hand made restaurants are dying off since the machine made is more efficient.

That makes more than one bowl and it doesn't take that long. Making the dough is a process apart but making it nuddles only took him like 10 mins.

Vaishnavi Yemul it’s the original black bean noodles. The instant noodles available in the market are just the simple version which lack authenticity.

수타면 만들때 보면 힘 들이지않는 것처럼 보이지만 무척 힘이 들어간다고하시던데 오랜시간동안 대단하시네요 힘들어서 요즘다 기계에서 빼내는데...면이 정말 맛있을것같아요^^

아, 수타가 힘들긴 힘든가 보네요. 주문들어오면 즉석해서 수타면을 뽑는다고 하시네요. 이런 집이 잘됐으면 좋겠네요~

첨엔 수타를 하다가 힘들어서 다들 기계로 갈아타는거 같더라구요. 이름만 손짜장인 곳도 좀 있는걸로 알고 있어요

다른 수타 아닌곳은 다 있겠죠. 아님 면 뽑은걸 쓰거나... 제가 중국집 사장이 아니라서 잘 모르겠어요. 손칼국수 집에서 기계로 뽑아쓴다고 들은적이 있어서요

@@gregorsamsa1364 it is Chinese pulled noodle and black bean noodle has been introduced to Korea by Chinese immigrant just recently (50year span)
Loved the fact that he rinsed the noodles like how someone would normally wash their hands 😂
