20-minute Zucchini Pasta

⭐️ Zucchini pasta, as in pasta with zucchini, is a creamy and easy one-pot recipe to have as a tasty weeknight dinner for the whole family.
⭐️ Ingredients
Main Ingredients
2 tablespoons extra virgin olive oil
1 yellow onion
4 cloves garlic
6 cups (27 oz) zucchini grated with the large holes of a box grater
1 teaspoon oregano or thyme
1 teaspoon salt or more to taste
½ teaspoon black pepper
12 ounces pasta rotini, fusilli, farfalle, penne, or other
3 cups vegetable broth start with 2 cups or 500 g and add more if necessary
½ cup parmesan cheese grated, or dairy-free cheese
½ cup greek yogurt or dairy-free yogurt
¼ packed cup basil leaves
Garnish with
1 medium lemon the grated zest
2 tablespoons pinenuts

780 grams zucchini grated with the large holes of a box grater
1 teaspoon oregano or thyme
1 teaspoon salt or more to taste

340 grams pasta rotini, fusilli, farfalle, penne, or other
750 grams vegetable broth start with 2 cups or 500 g and add more if necessary
50 grams parmesan cheese grated, or dairy-free cheese
100 grams greek yogurt or dairy-free yogurt
¼ packed cup basil leaves
Garnish with
1 medium lemon the grated zest
2 tablespoons pinenuts

I’ve made something similar for years. Instead I use shallots and I actually let the zucchini cook down for 30 minutes to create almost a chutney. Then I add the pasta and pasta water which makes a super yummy dairy free sauce.

I just made this and it was amazing!!! Superb and easy recipe!! I replaced the vegetable broth with chicken broth since thats what I had on hand. Instead of regular noodles I replaced it with chickpea noodles…delicious!

added two zucchinis instead of one because i had an apparently false memory that two average sized zucchinis is what makes about 750 grams. didn't have oregano or thyme but did have some old italian seasoning that was stuck to the bottom of its mill, added some water to get it out. didn't have vegetable broth, one beef bouillon cube plus water it was. didn't have yoghurt , added some sour cream instead. didn't have cheese, added a maggi carbonara mix instead (it's supposed to go into 10% cream, so figured my 15% sour cream + the pasta water would work fine) plus some balsamic vinegar. still worked out okay. tomorrow i might add some dill (since I don't have basil) and lemon zest (i do have a lemon). no pine nuts though. thanks for the recipe.

This was delicious! I made this with a mix of chicken and veggie stock and skipped out on the Greek yoghurt. Took a bit longer to cook the pasta but was so worth it!!! Definitely going to make this again

Omg thanks a lot for the recipe! It was absolutely amazing❤ I changed the type of yogurt tho. since I'm Turkish, I can't even imagine using an alternative version of our yogurt such as Greek yogurt etc there are already tons of varieties here lol. For example, I made it with Turkish buffalo yoghurt to give it an extra creamy texture. It's the thickest one in the world😹, I use it as an alternative to things like heavy cream. It is even thicker than Turkish sheep and cow yogurts. Oh and I wasn't too sure about lemon zest either, I've never tried it for pasta before. But I wanted to give it a try and it was soo delicious! can't even understand how a tinyyy touch balances the whole aroma that much. It was the best pasta I've had in a while ^^

This was awesome. Make 2/3 batch, used pre-cooked pasta, chicken broth, & almond slivers bc that's what I had. Definitely a recipe worth saving. The lemon zest goes great on top

This was good! I used small shells, and maybe that’s where I went wrong. It took about 30 mins and 4c of broth to get the pasta cooked.

dont use extra virgin its waste. for cooking cheaper olive oil for not cooking like salads extra virgin

I deny to taste pasta with lemon. I just deny. Yoghurt is totally a treasure for an ingredient... It s match to almost any recipe!! It replaces flower if you want a dense sauce milk cream or creme cheese... I love yoghurt...
