    Honestly a lot of recipes call for amounts of things that simply are too little...not sure why they pretend to use such small quantities (maybe for health/nutritional guidelines)...my rule of thumb with garlic is take what a recipe calls for a triple it!

    I made the mushroom leak and terragon pasta but I used linguini noodles. It really was phenomenal. Using chicken stock and cream for a sauce is something I'll never forget now. Chibada bread was the best with it, too.

    I've tried this as well, but used coconut cream and vegetable stock to make it vegan. I also couldn't get tarragon so I used thyme instead but the result is still amazing. This is one of my go-tos now.

    I'm no chef but I like to make pretty fancy meals as much as I can. My tips are to use canned food where you can, such as canned tomatoes in place of regular tomatoes in a soup or sauce, buy what's in season as it tends to be cheaper and much tastier, and stock up on staples when there's a sale. Yoghurt is an excellent substitute for cream and as it's used in a lot of everyday meals, it means you don't have to buy cream just for one meal. You can also try using milk and a bit of flour to make a roux-type sauce. Grow your own herbs if possible and if not, go for dry herbs as you'll get much more out of them. Opt for frozen fruit and veggies where you can. I almost exclusively only use frozen spinach and broccoli in place of fresh, and use frozen mixed fruits to put in my morning porridge. Extra Virgin Olive Oil, lemons, dried herbs and standard spices are your best friends when it comes to seasoning. Try and make your own seasoning mixes too, such as taco spice, in place of having to buy a new sachet every time you want tacos. If you have time/can be bothered, bake your own bread, cookies and cakes, it's much cheaper and usually is much better for you, and lasts longer of course. Also if you can, buy fresh produce from a local deliverer instead of going to the supermarket, this produce is likely to last much longer in your fridge if you store it properly compared to supermarket produce. Hope these tips help :)

    Been broke… forever… Biggest trick I have to always having good food on limited means is buy large cuts of bone-in meat, fillet the cuts yourself, then throw the bones into a crockpot, stockpot, pressure cooker… whatever you’re into. I checked nutrient extraction efficiency. The difference is negligible. Same with vegetable scraps, indiscriminately thrown into the broth. Strain and store. Now you have a workable amount of meat bought for cheap and a broth that can be used for soups, gravies, vinaigrettes, pasta sauces, dips….endless… Added bonus: consuming collagen and gelatin on a regular basis improves skin elasticity, joint health and organ function. My shoulder got really bad from overuse at work and I swear going back to a broth diet helped a lot. From the projects to the trailer park keeping this consistent habit has kept me from worry too much about grocery cost.

    These videos have taking my cooking to the next level. Even on a tight budget. Buy the best you can afford and substitute what you can. (I can’t swing truffles on potatoes. I cooked bacon ends and sprinkled them on top). The technical part of cooking is so important. You can make anything great.

    Those chili-beef lettuce wraps are AMAZING! I did it with lettuce for wraps as shown, but you could also serve over rice, or with mu shu pancakes or wantons as well.

    Ive only ever thought to use boiled potato and egg as the key binder to make veg fritters (or cutlets) ..this flour, egg and milk version to tie it all up sounds soooooo much more easier!! I cant wait to use it and switch up the veggies ❤❤❤

    I'd been cooking since I was a little kid with grandma. October 2020 I caught COVID. I had a mild case and recovered in around one week. Everything was fine until January when I noticed some foods tasting off. Fast forward to today and nearly every protein tastes unpleasantly off. Many fruits taste rotten and vegetables often have no taste at all. Dairy varies wildly. On a more dangerous note, I can no longer smell natural gas and constantly check my stove. I really didn't realize how much I truly enjoyed cooking until I could no longer season my own meals and today, my 35th birthday, I can't tell you how much I miss simply being able to taste a sauce I've made and be able to tell if my family will like it. I used to consider myself a good cook and now I can't tell you if a chicken soup has too much salt. Anyway, if you enjoy cooking and want to be able to smell a gas leak, vaccinate lol

    I love watching these videos of Chef Ramsay cooking. I'd love to try some of the ones that especially catch my interest, but unfortunately, I am allergic to citrus. With as important as the citrus sounds to the overall flavor of the recipes, I'm afraid leaving it out would ruin it. I don't know what could be used instead.

    Allergic to Citrus.....so you cant eat fruit?? People think theyre allergic to peanuts, but its the chemicals they treat the peanuts with.....are you in tbat category? Is it citrus or the sprays on the fruits? Bug sprays etc. Get properly tested.

    I get terrible reactions from things like oranges, grapefruit, lemons and limes. Dr told me that I was allergic to citrus fruit so have to avoid anything containing them.

    The purpose of lemons/limes is to add acidity to a dish. Acidity balances out rich and fatty flavors. You can substitute them with any form of acidity - another commenter suggested vinegar and wine, which are both great. Even something like tomatoes can provide acidity.

    I do a lot of Asian cooking at home and whilst it tastes ok, there was always something missing. Having watched so many chefs on youtube, the 2 must have ingredients are palm sugar and fish sauce. Man o man do those 2 ingredients lift your food. Yummy.
