    @@-suiluj- Lol, no, the word indicates its presence in the video and just the look of that greasy filthiness makes my stomach turn. Plus hearing it sizzle, I could almost smell it (yuk). My gag reflex aside, any consumption of pork in your diet increases the risk of heart disease and cancer (ask any doctor worth their salt) so you might wanna consider not makin that bacon ;) Ok yeah, the word too makes me feel gross 😌

    I usually do burgers on sundays when im alone, i do them like this: -brioche bun -burger sauce: mayo, paprika, pepper flakes, hot sauce (siracha), ketchup, finely chopped green onions. - thinly sliced avocado and 2 thin slices of tomato. -2 burger patties pretty much the same as this video just a little bit thicker. - 2 pieces of bacon - half a medium onion caramelized. It NEVER fails and i suggest u try it

    OK, this is epic. And I love how well you lay things out so that I don't think 'the chef could do this in 15 minutes but it'd take me 45', it actually seems like I can do it too which is great. Also, love you love for pickled onions, they are probably the best use of any vegetable out there, liked em so much I pickled some celery and chilies too and they were awesome as well

    I would suggest making any kind of combo sauces like this at least a day in advance to allow the flavors to "get to know each other". The depth of flavor enhances and allows everything to come together. Aside from that small critique from a fellow home cooking need, keep doing your thing brother! All of your content is top notch!

    Damn this looks delicious and easy to make. Keep up the awesome videos man! As a spatula I always use a plaster trowel with the handle in the middle. This makes it very easy to push in the middle of the meat pile. Also these plaster trowels are super cheap.

    Ethan, you should have a go at making your own American style cheese. It is well worth it and pretty easy. I also agree that clean-as-you-go helps destress the cooking process!

    I've done these with a brioche recipe I've found online + your remastered oven fries and it came out perfect! I might have overdone it on the vinegar while boiling the potatoes, though.

    highly recommend the deli deluxe slices that ethan uses here as they're a pretty slept on alternative to typical kraft singles, but they have more sodium so definitely go easy on the salt. for super crispy thin burgers, i would suggest using a heavy meat weight with a handle for smashing, and a large spatula with a beveled edge to scrape them off the pan.

    @@ChefBasicswithBaz Sure is homemade. I live in Mississippi so great BBQ is plentiful but great pizza is not. I use 540g of 00 tipo flour, 140g of semolina flour, 385g of water, 70g of olive oil, 21g of salt, 28g of sugar, and 14g of yeast. Mix it up, divide it into 4 dough balls and let rise in the fridge for 3 days. The 00 Italian flour makes for an extremely supple dough. You could use bread flour instead which is far easier to work with. Yes, that is quite a bit of oil, but it still works out to a 65% hydration. You could make it easier to slide off the peel and into the oven if you drop to a 60% hydration and dropped the oil to 35g.

    YO ETHAN!!! I've been watching your videos for about a few weeks now. Just the odd one here and there, you know how it goes with the youtube dabble. Anyway thanks for showing me the way with deep frying. I'd agree, it isn't actually all that messy or much hassle. Now, these burgers... I've tried burgers once or twice over the years and would say I am medium-low proficiency in the kitchen. Why does everyone overcomplicate burgers?? Onions, worcesterershirer sauce, secret ingredients. These were absolute mind blowing. Start to finish they took 1 hour for a first time attempt. That included frying some chips (brit here) and 2 runs of burgers because I cooked for my brother. Anyway love your shit!! Keep on keepin on!

    A hit w/my family. Even used pickled red onions (pickled along with serranos to give some kick), your sauce, & used pepper-jack cheese. Great methodology for a single burger, but when doing 4, you only get a cold griddle at the beginning, so I did all the bacon at once, then proceeded one at a time as per the video. I've got a Lodge griddle with a grease trough, so to doctor up the 2nd-4th buns, I dipped the spatula into the trough and dripped the grease back onto the griddle, & sopped it up w/the bun. For indoor burgers, this is going to be my new go-to method. Will probably change the sauce ratio to be thicker on the mayo next time and maybe drip a little homemade Worcestershire on the patties right after the smash.
