    Maybe just me, but I like that you highlight cleaning throughout the video--it's the same way that I cook. A clean kitchen just seems to allow you to focus more on the process, and a less stressful experience overall. It's just as important as any other aspect.

    I really like that this channel, unlike the other big ones (Babish, Joshua, etc), focuses on time and practicality. That's my favorite thing about it. I want to know exactly how much time this stuff takes, and what multitasking/cleanup I can fit in while stuff is cooking. Also I like how it's not about crazy ingredients, instead the ingredients are mostly inexpensive, common grocery store staples. Channels that spend 6 hours prepping and use all the most expensive ingredients are great, but those videos aren't that useful. Entertaining, maybe, but I won't pull those videos up when I'm looking to make dinner.

    When I make lemon pepper wings in the oven, I use the schmaltz in the pan to "wet" the wings so the dry lemon pepper seasoning sticks to the wings and since the schmaltz doesn't have water, the wings stay crispy.

    Really pleased to say that I tried this battering method with eggplant cut into circles and it works very well to make crunchy on the outside soft on the inside vegetarian nuggets for my vegetarian mum. Really glad to have found a simple n easy egg free batter. Also tried it as advertised with chicken breast and turned out great also. Thanks!

    We used to make a version of these, but with a different flour mix: 50g flour, 50g panko breadcrumbs, 2tsp bicarb and a few flavourings. Super crispy and fluffy, great golden colour, too. Worth a try.

    Being from Atlanta, and getting many a takeout wing/finger over the last two decades: Lemon pepper wet is lemon pepper but with lemon pepper seasoning in butter as sauce, as opposed to lemon pepper seasoning directly on the wing before frying, this "dry" preperation is the way cajun and jerk wings are also served. Lemon pepper + buffalo is Lemon Pepper Hot, dry prep lemon pepper then tossed in buffalo sauce if you're somewhere that does it right, or just lemon pepper in the buffalo if you're somewhere lazy. Dry jerk + tossed in buffalo is my personal go to trashy buffalo wing prep.

    I promise to you that these will be the best chicken tenders you will ever make/eat. i didnt do lemon pepper but i bet it is amazing. i melted a stick of butter and mixed it with diced garlic. i dumped it over the chicken and put a packet of ranch seasoning tossed them around and no doubt best chicken ive had in my life.

    Ethan, I consider myself fairly adept in the kitchen. But I always shied away from deep frying because I thought it was too messy, oil in the air blah blah. You've shown us that it really isn't difficult and the results are so worth it. I've made a few of your recipes so far (the burgers are ace). Frying (imo) is the tastiest way to have chicken (in moderation), and for me it brings back some great memories of eating fried chicken on my last roadtrip across the southern states (definitely brought a smile to my face during the latest lockdown here in London).     Your recipes are ones that I actually favorite to come back to later whenever I want to actually make the food. For whatever reason I like cooking shows as a background thing to listen to while doing other things, but most are just "That looks delicious but I'll never actually put that effort in myself to make something" vs "Ok stop what I'm doing this is a recipe that's actually doable and I love Lemon Pepper wings"

    @@boosteddrimmsu dredge for the chicken? It means the coating, essentially the mix of white flour/cornstarch and salt that you will use to make the chicken crispy.

    I made that lemon pepper wet but put a little bit more oil and drizzled it over some fish. Such a good idea to make that flavour into a sauce almost. Always thought of it as dry only.

    They sell splatter screens in most Asian stores, you can use them to significantly reduce grease cleanup. They're mesh so steam can still escape. And you can use them with basically any pan they can fit over. I'm surprised no one on youtube has mentioned this, as it's probably the easiest method to cut down on mess, and protects you from grease splashing or pops.

    Would you consider doing some dishes featuring chili cheese? Plenty of good weekend snack dishes that you could make your own twist on, also it would be nice to have a nice detailed description of what cheeses are best suited for dishes like that. Thanks for the many great dishes you've shown so far, I have made quite a few and they've been great, I live in Sweden so many of your recipies are dishes that aren't very prevalent here in Scandinavia.

    Hey man, I've been doing a lemon pepper wet using a modified buffalo sauce for a while. I use cholula rather than Frank's and the juice of a whole lemon as well as the lemon pepper seasoning. Cholula seems to play better with the lemon flavor.

    I often use the lemon juice in milk trick to imitate buttermilk. If I'm frying bone on chicken, I'll actually part-poach the pieces in that same liquid.

    Would be cool to see what would happen if you lightly toasted/dried the lemon zest, as some recipes recommend. I wonder if that makes a difference?

    I never felt like I had enough pepper when I made my lemon pepper wings, so I took to adding pepper after they were done and I found out that just a light sprinkle can bring a better balance if you ended up too lemon-forward at first. I also learned that you could be too pepper-forward and that's not good, that adding more lemon juice after ruins the crunch and that a little powdered cayenne and red pepper flakes mixed in with the black pepper worked better for a spicy version than a buffalo sauce mix-then again I'm not a buffalo wing fan, so your tastes may vary...

    Hey ethan, I noticed you said that you were worried about oil splatter. You can try buying a splatter guard. I haven't used one myself but I remember seeing alton brown using one in his video for fried chicken.
