Ingredients:
Serves 4-6 pax
Ingredients for Chilli oil

2 tablespoons of oil
1 teaspoon of Sichuan peppercorns
2 teaspoons of chilli powder
Ingredients for soup
====
Cooking oil
100g of pork loin - cut into strips
60g of shredded carrot
8 pieces of dried mushrooms - cut into strips
60g of black fungus - cut into strips
80g of ham - cut into strips
1.5L of water
1 cube of chicken bullion
1 piece of soft tofu (suitable for soup)
2 tablespoons of soya sauce
3 tablespoons of black vinegar
0.5 tablespoon of white pepper
1 teaspoon of salt
Some cornstarch solution
2 beaten eggs

Thanks for the recipe. Hot and Sour soup is my downfall. Seems that I have been making variations of this soup for years and have not had it turn out the same way twice. After some experimenting over the years, I discovered that white vinegar is not the way to go, not even for a quick bowl of soup. For my current version I'm using some black Vinegar to more Zhenjiang Vinegar which helps give the soup a sharper flavor. Also, I sometimes substitute Balsamic vinegar [ because it is close at hand ] in place of the black vinegar.
Lovely soup, this dish happens to be in my menu for my wedding which is coming up soon :)

Can I replace black vinegar with white vinegar? Will it affect the taste of my soup? I'm making this for our family Christmas dinner this year together with your 5 other recipes ^^.

What is the ratio of corn starch n water for the portion?

Hi Val. No hard rules. Just put a few teaspoons of cornflour or tapioca starch in a bowl. Add water bit by bit but not too much. As long as the flour has dissolved to make the solution into a slurry, you’re good to go.

A beautiful pan! I want it... What is the pan? I have sechuan peppercorns and Korean chili flakes. I am obsessed with hot and sour soup right now, but I need to make it vegan for my son and his children. Which I can figure out. But what is the pan?

Thank you so much Lorrie. The brand of the pan is Shogun by La Gourmet. It’s a granite coated pan. We love it’s design because it’s deep enough to cook stock and yet angular enough to be used as a pan too. Also love the granite coating. Very sturdy. 👍🏻👍🏻

I’ve had this in a chines restaurant before it’s good. Do you know how to make the soup with peas and port strips and egg. I tried it once really loved but I haven’t had it since and I don’t know the name
