I was craving coffee bread and i searched it in the net, found this coffee bun that looks delicious, So i baked and experimented not using bread flour. First i used all rice flour only, but the topping was melted in the pan ("="). So i baked it again and changed minus and plus the flour.....
I baked the second time... while my bread was in the oven im going to prepare for the coffee topping. OMG!!!! i did not noticed im out of rice flour! So accidentally and panic i found thus oat flour in my refrigerator and alternate the topping as oatmeal instead rice flour.
HOnestly i dont want to upload this video anymore because it doesnt look beautiful, but when i ate this, one bun was already in my stomach! It is really DElicious!!
To have beautiful topping.... THE point is pipe your coffee until the whole bread cover. Then it will be more attractive and near similar to the original Coffee BUN.
If you are interested this are my ingredients.
100 gram rice flour, 2 gram dry yeast, 1 gram salt, 8 gram sugar,, 6 gram rice oil or vegetable oil, 105~110 warm water ( 27*c) and 3 gram psyllium powder
For coffee topping
18 gram unsalted butter / unsalted margarine, 18 gram brown sugar, 14 gram beaten egg ( room temeperature), 25 gram oatmeal powder, 5 gram potato starch ,3 gram coffee powder dissolve in 1tbsp very hot water,
****you only need 1tbsp coffee liquid for the topping****so be careful in adding into the mixture
and and last is cocoa,( i just to have a darker color of the topping) 5 gram cocoa powder.
you can omit cocoa powder.
