I really love the divergence in this episode. I couldn't care less about who's trending on TikTok, but seeing some of that "It's Alive"-style camera, people offscreen, and just some unedited silliness is a lot of fun. I still love your typical format, but it'd make me happy to see an episode in this style a little more frequently.

This is why I LOVE the Botched episodes, because theyre 2-3x as long as normal ones and all shot like this, with a 'behind the scenes' feel to them.
I am a complete beginner and this was SUPER helpful! Very useful information and not just like most other beginner videos of like “how to chop a vegetable”.

Yeah I would have swapped out peanut for sesame too. You can make do deep frying with vegetable or canola oil. Sesame oil is irreplaceable in Asian cooking. But Asian food has always been on the sidelines but if you offered me a steak or piece of kalbi there would be no hesitation what I’d pick. The one with sesame oil.

I about the say the same thing about Japanese food. Sesame oil is delicious and unique. Regular olive oil does the same thing a normal vegetable oil or peanut oil does, but worse because of the low smoke point.

Ok, but to be fair, he did specify "cooking oils" didn't he? Like, I would classify sesame oil as a flavoring oil, like I would truffle oil or lemon oil. I was thinking of cooking oils more as oils meant to treat food with heat, like sautéing, sweating, or deep frying. No?

Babish's early videos showed a reserved, almost awkward personality. Then he had this deep, luxurious voice that emanated confidence, and now he's just so playful and personable, and I really enjoy that. :)

Fun fact: Refined peanut oil only contains the fats from peanuts, not the proteins, and the proteins are what triggers allergy symptoms. In other words, so long as the oil is well-refined (so avoid things like cold-pressed), peanut oil is perfectly safe for those with peanut allergies.

I bought some sun-coco oil to use instead of vegetable oil. It works really well and as far as I know is healthier than vegetable oil. it is a little thicker initially but thins out as it heats up, and has a similar temperature rating to vegetable oil. I wouldn't think this is a deep-frying oil, but then again what I know about cooking can fit in a small box. Quite a small box indeed!
Babish seems so much more confident around his guests, and us. Was great to see his true self.

This episode was extra fun and i really enjoyed it. I really like and find these tip helpful as well.

When babish said "you only need three oils", I straight up though he'd say canola, evoo, and a flavored oil like toasted sesame or unrefined sunflower, or like truffle or something. But no, apparently he needs two types of olive oil. Huh.

I keep only three oils: Canola/Olive blend, EVOO, and Sesame for my Asian inspired cooking. I wish I had peanut, but can’t find it in my country.

I typically keep Light Olive (non-sear stuff), Canola (baking and seared stuff), and peanut (frying), but I also would say grapeseed oil is a nice oil for massages. Just don't get it on the sheets - it can stain.

In case anybody doesn't know (depending on where you live) the vegetable oil he had is typically canola.

As a Spaniard, for me there's a tip missing in the oil part. If your olive oil is too bitter for what you want to do (baking, deep frying) it can be solved by frying an orange peel or piece of bread in it first, it takes most of the bitterness away and it's *chef's kiss* to use hehe

@@antoniog56 I was gonna say commitment by Babish and felt a bit bad he had to even compare the two. Girl seemed sweet and all but yeah, Babish has made quite a bit more of an achievement in my opinion
