Oh! BTW, I have REALLY bad Carpel Tunnel Syndrome and it’s really difficult for me to spatchcock a chicken or turkey. I decide to purchase a $5 pair of garden pruners! They are absolutely magical for spatchcocking poultry! I’m right handed and I’ve lost quite a bit of strength in my right hand, my entire ring and pinky fingers are numb along withy palm going up to my ring and pinky fingers. The garden pruner has been such a blessing for me and makes it easy peasy to do these cuts! Just a thought for people who may have the same issues as I do or even arthritis! I hope this helps someone as much as it’s helped me! 😊😊😊

Thank you! I have the same thing with arthritis in my thumb and numbness in thumb, index and middle fingers.
You know you’re going to have a good week when Marion starts it off with a home favorite 😊
I do a similar chicken cooking technique, except as the oven is preheating to 450°f I put in the cast iron skillet into the oven and it heats up at the same time. I cut up the whole chicken into pieces and when the oven is upto temp, I take the cast iron pan and add butter and place chicken skin side down in the pan and put back into the oven for exactly 15 minutes. After 15 minutes I flip chicken over and back in the oven for another 15 minutes or until done. As long as the chicken is around 4 pounds it shouldn't take more then 30 minutes to cook. Love the pan juices for gravy. I will give a try on my next weekly chicken kid dinner
I've already spoilt my wife this last week by cooking her your spicy lamb cutlets and then beef and broccolii stir fry. Both were real winners. Now I'll have to try this 1 hour chicken dinner. I love making the effort to please her and the rewards are sometimes well and truly worth it..if you get my drift ...nudge,nudge.
Looks so great!!! I’ve never seen spuds done like that before, I’m totally stealing that.

You should! So goood!!!
This looks amazing Marion. I wonder if you could demonstrate how to carve up the cooked chicken. I love this butterflied method as it means so much of the skin is browned and crispy, but I struggle to carve it nicely so a demo would be appreciated. Thank you for your great videos and recipes.

Great idea! I can definitely do a little carving demo in one of my next roast chicken videos! 👌
That's the way I love gravy you just made.
Winner! Winner! Chicken Dinner!
SO very much LOVE your food; have enjoyed numerous incredible recipes including this Roast Chicken!! Hugs from 🇨🇦
The potato’s in the pan slightly crushed is my secret weapon for those impromptu dinner parties. When people are out on the deck socialising and I’ve totally missed managed my time doing them this way is such a sneaky cheat, they are none the wiser haha

When we render bacon or saute onions we add some water, with some oil for the onions to the cold pan. That way you have a temp high enough to render bacon or soften onions till the water evaporates and it begins to fry/saute, takes abit longer 3-4 minutes depending on the amount of water you use. But reduces the chance of the bacon burning and the onion caramelized better, especially if you have a larger amount we have found. When caramelizeing onions we will often add a splash of water during the process to slow it down, allowing the acids to break down better for better sweetness. Adding the water also washes maybe deglazes for want of a better discription the browning evenly to all the onions for a more even results colour/texture/flavour wise. With the mayo we sometimes add extra herbs spices, depending on what additional flavours we desire. Thanks for the video, take care, God bless one and all.
Yummy I'm a day late but, please tell me that U DIDN'T forget to take her potatoes home as ordered 😊 Enjoyed from Atlanta Ga ❤
Just made this today for the fam. Loved by all .🙏
Ther's a reason why there are cooking books just about sauces and gravy. It does make a delicious difference. Maybe once a year I'm cooking a classic jus. Yes: it takes about 8hours, easily. But the result is just phenomenal. I use the fat as a spread on bread. The elevation it brings to a sauce is another level. I could provide a recipe from a german spoken chef. But a link here would make this comment end in a list of blocked comments. Just tell me if I should send it (as an answer to your answer, then). He uses beef. I'm fortunate to have a deer farmer just a few miles away. Greetings from the far north of Germany!
I love the mayo tip!! Gonna try it next time I roast chicken. Thanks for this deliciousness.
Well! A delicious dinner! Love it very much! Thank you!
Question: wouldn’t it be better to rub the mayo first and then sprinkle with salt? I feel like when salt is applied first and then the mayo the salt just moves around when brushing the mayo on top and the salt doesn’t stay evenly distributed on the chicken 🤔
My Hawaiian friend that loves mayonnaise on his rice loves this! Thank you gorgeous, from Barcelona,N.Y.❤

I’ve seen this vid before I think 🧐 good reminder to try the mayo tip 😊
Sometimes we just want to do the basics 🤩

My stupid question: only salt and mayonnaise on chicken. Looks so beautiful! Thank you for sharing this video ❤❤❤

Lovely and beautiful!❤Cheers.
the mayonnaise best for roast chicken😍😍😋😋
Do you use fan bake?
Очень аппетитно!
Just wondering what pan is being used for the chicken here? 😊
Marion! This is the way I do my roast chicken! The mayonnaise is magical, with no mayo flavor at all. It's also good for "oven-fried" too. Now this is a comfort food dinner. Those smashed potatoes are delicious! You've made me so hungry for this meal I have to make it, Marion. Yum! 💕💕💕

I’m making this entire recipe later today, sans the pan gravy. (I only want a serving or so, the rest goes to my sister and brother in law. They’re not gravy people). A quick question though, why add the pork lard? Is it for flavor or extra fat? I have a LOT of bacon fat. About 1.5 quarts. I do want the bacon bits as well! Is it necessary to add the pork fat? Thanks so much! I absolutely love your videos!!! ❤❤❤
@bluebird4614

Probably for the flavour. The same way a lot of chefs use chicken skin, beef lard or fat
@Marionskitchen

If you have lots of bacon fat then don’t worry about the lard. The bacon I used on the day was not very fatty. If you’ve got lots of bacon fat then just use that! If you want bacon bits (I recommend) then add those and top up with your exisiting bacon fat if you need. But otherwise… just potatoes and bacon fat is excellent!!!

We don’t eat bacon or lard so what’s the substitute for roast potatoes
Looks gorgeous 😍 Would this work well with split chicken breasts?
That looks divine😋😋😋
0:37 "All possible within an hour of getting home from work". It would be an hour before I located all the ingredients, prepped them, and then got it in the oven! Given she also says the chicken might need an hour in the oven I think 2 hours from getting in the door is more realistic 😊
Tip for today is the bacon fat... I usually throw that away... Thank you
Mother
😢
Looks delicious😊 but I wish it wasn’t so full of fat 😅
too much Fat, Lard, Butter.....really not up to date 👎👎👎
There's nothing like a healthy meal, is there? Bacon fat, lard, and a carload of butter. Looks delicious, but that's a hard pass! How do you not weigh 300 lbs?
