I saw these two locos together and separately in a diesel gala on my first visit to the UK in 2000. 37324 suffered a fault during the gala and only 37215 worked trains. For me it was chilly rainy weather and the signalman at Winchcombe invited me into his box to warm up and have a chat. His pot belly stove was leaking coal smoke into the signal box so I fixed it so it didn't. It also had a fair amount of soot in the flue so a few whacks with my hands cleared it.

Why do Class 37 locos seem to always modulate throttle? Why not even, steady throttle to maintain most efficient engine rpm?

They do that when the wheels lose grip on the track. When they start slipping the power drops off, then it comes back to start powering again. If the wheels slip again the power drops off again etc.

Is the Beverley stop routine? I've only seen them passing straight through.

No it's not booked to stop there. It depends on how things are running on the night - if it's close behind the preceding service then it stops for about 5 minutes or so waiting for the preceding service to get to Driffield (which is the next signal section). If everything is running as booked though the train is booked to pass Beverley without stopping.

Can anyone tell exactly what this train is doing? It always seems the same layout with only 5 wagons plus a another and another tractor unit at the back..Thanks.( I should read all the other comments!! Track cleaning, yes)
