Hola! My name is Mari and I’m a Puerto Rican wife & mom of 2. Take a peak into my kitchen while I create my culture’s traditional dishes. ❤️

My hope is to also inspire all generations of both island-living and stateside Puerto Ricans to get in touch with their Boricua roots by means of cooking. 🇵🇷

    I was watching Power Book II Ghost and they were eating this dish. I looked it up and was like ...Oh my..i need to make this dish this coming winter. My hubby will love it. He loves beef and rice. Id make my cornbread to add it. I cant wait!

    Ms. Maria I just found out my son loves this recipe. Thank you for putting it up. I would make it for him. I would challenge myself by using two different ingredients which is sweet potatoes and turkey ground meat. Just to see how if he would like that also. Lol. Thank you for sharing. ❤❤❤❤❤❤❤😊

    @@mariscookingpr Pulao in South Asia uses Masala, that's the only difference, one common spice being cumin / jeera with Pollo, the rest are different LoL

    Hey Mari 🤗 That Pernil looked fabulous 😍 I usually cook pork butts/ shoulder in my crockpot or when I use the oven I like to use cooking bags. The skin I would cook by itself. Did you know there’s non-stick foil? Not enough on a roll for me. Maybe for an occasion but I wouldn’t use it regularly. Too expensive.

    @@nataliemscrzysxycoolharris Hi Natalie! Ooooo those are some great tips! I like the thought of braising it in a crockpot and just cooking the skin separately! 😯 I’ve never tried cooking bags but want to!

    @@mariscookingpr Yes you should try cooking bags. They should be located near the aluminum foil in the grocery store. It helps to lock in the juices of whatever meat your cooking in the oven. Put all your veggies in it too. Easy cleanup too.

    Mari, I was trying to find a good online recipe for guineos to give to friends and found yours to be the best. Others say to peel the guineos before boiling, and that's a recipe for early discouragement. I follow your technique (and my mother in law) and boil them with the peel on, and that's a recipe for success. Thanks for sharing the right way. 😉👍

    Hi! Honestly, all you need is a good deep dutch pot of various sizes. You can get caldero sets on Amazon! Large wooden spoon, and some good quality pans. Which reminds me-I need to change mine. 😂

    Hi! Do you mean frying them in olive oil? Or replacing the butter for olive oil?

    @@mariscookingpr frying in olive oil. I ended up using canola and they don’t turn out well when I fry them. They start falling apart during the frying process.

    @@elenaflores7523 Okay, so that is probably due to the potatoes needing a bit more cornstarch. That will help give it a better consistency! Pure olive oil is decent for frying, but grape seed would be better as it has a higher smoke point. Don’t give up! What kind of potatoes did you use?

    Okay, try adding more cornstarch next time. Like, an extra tablespoon and see how it goes! Also, make sure your oil is pretty hot. If the oil is not hot enough, the potato ball will start to absorb excess oil and get soggy, which will result in it disintegrating within the oil. I hope that makes sense! Again, don't give up!
