  Of course you don't have to use sparkling water, you can use still, sparkling just makes the cake fluffier. Enjoy cooking.

  Im trying this recipe! But we only have roasted nori in the supermarket. Can I use this instead of dried kelp?

  Unfortunately it’s totally different flavour and in my opinion you shouldn’t use it. Try to find dried kelp or just skip it.

  Great recipe. Tried making today, albeit without some ingredients such as spring onion and tofu. Was yummy. Thank you! By the way, I used water collected from 2nd rinsing of rice instead. Is this ok too?

  Of course you can use regular water, I used sparkling one to make batter more delicate. If you prefer use cabbage, vegetables you like.
