i agree with you that getting a boh job can fast track you, you learn from other chefs in the company. when i worked for the catering companies, i was a prep chef for most of the time, then got sous chef roles and during high end events, they sent me out to be front chef.

have u tried the ccsf pastry program? is the vocational school that you went called job corps at treasure island? i got hired for a catering company in sf without any experience, through my sister she was a server. i learned so much, then i got hired by a few high end catering companies in sf, one had several michellin chefs... learned a lot. then covid hit, lost my jobs and been back to ccsf and switching careers to IT.

I waited tables throughout college and I thought the restaurant business was pretty rough and demanding. It's a job for young kids, I can't imagine working in a restaurant in your 40s or older even 30s would be challenging.

You start work at 3AM? Your parents must be so proud of you because I am :) I can relate to you I'm a French baker in London I start work 11PM throughout sometime 7-8-9AM - I have the entire production kitchen and premise by myself because it's a one man job. Not easy but the good thing is, I get to develop so much skills using all equipment, recipies, books you name it :) And no-one tells me what to do, no stress and it's fun. Keep up one day you could run your own business.

If you don't like the orange color, why not a shade lighter, and with the remaining cream could be the actual color used for piping borders
