Hey guys! I wanted to show you a little peek into my life outside of work and how my job as a pastry chef affects my daily schedule! I work dinner shifts so I wake up, go to work, and get home a lot later than the average person.

FYI for anyone watching this to decide if this career is right for you ( and if you live in the U.S.) just know that this is a pretty unrealistic version of what your experience will probably be like. yes, what is depicted in this video is real and achievable to some degree but the majority of baking jobs are not like this. you'd have to be a very talented, well accomplished, highly skilled and experienced or just plain LUCKY person to have a job like this. What is more likely is that you'll be working on much larger quantities of these pastries... which means you'll be straining your body doing heavy lifting, and instead of cracking 15 eggs you'll be cracking 2,000 eggs.. and instead of making one pan of bread, you'll be making 12 large pans of bread... instead of using a normal sized pot on a stove, you'll be using a pot large enough to sit inside of and that someone will have to help you carry and hold while you stir the contents using all the strength in your body.... It isn't really as cute as it seems in this video, IRL making pastries is laborious work, its very physically demanding and will lead to a lot of physical pain. It's also not so chill like is in this video, IRL it's very chaotic in the kitchen and you'll be working alongside a lot of people who are counting on you not to slow them down or set everyone behind schedule. Also, you will probably make just a little over minimum wage so dont expect a glamorous or even comfortable lifestyle (in some places) with a job like this. Just know that this lifestyle depicted in this video achievable but not easy to achieve.

Ah and to add on I like and respect the girl in this channel and she’s awesome but watching her mould the bread rolls like a snail. ahhhhh no. This is a one in a million workplace.

This is very true. She is so lucky to work on this kind of company. I work in a comissary as pastry chef and i always lift atleast 25kg of flour for just 1 recipe. And now im suffering from carpal tunnel syndrome 😂
Please film more videos like that! It’s so interesting to get a glimpse into the kitchen of a pastry chef and your everyday life ☺️

Mia where are the videos at bruh.. these ones specifically.. As someone who works in a restaurant as well, its nice to see a female working in a mostly male dominated industry. Its refreshing to see a change for once and to see that your working these long shifts makes me want to work even harder.

how do you and your body feel about all the stationary standing? And honestly, night shifts are the best man. I love the after service part where we just close everything down and mentally wind down.

the standing is alot and at first you feel it badly but your body gets used to it. btw im a chef too

@@desiatovaalex Try a different mattress. I switched to sleeping basically on the floor (Just a very thin floor mattress, like 3 inches). At first it was uncomfortable and hurt a bit, and when I woke up I felt very stiff. But after 2 weeks that went away completely and now I wake up with zero back pain most days. The only days I have any is when I have REALLY bad back pain the day before and I'm still sore the day after.

Tip from chef to chef, getting a wet paper towel and putting it under your trays will still stop the slipping and save you wasting your labeling tape 😄 great video!

It was interesting to see your daily routine and how your long hours affect that! One question- how often do you have to lift heavy items and about how much so they weigh? I am very interested in pursuing this as a career, but I'm not very physically strong. Currently I work as a bakery clerk in a grocery store and usually someone else is willing to help me with heavier items, but I wanted to know how that works at your job.

I'm a pastry chef myself and well the heaviest thing to carry are 25kg bags of sugar and flour. However there is always someone who can help, kitchens are filled up with strong guys :) i don't risk my health and backpain, i just ask people for help.

It's normal, even strong people tends to have some problems while trying to carry some heavy groceries bags like sugar and flour bags, but with time, you get stronger and start to develop the "right muscles" in order to do that same task. I am a cook who does garde manger in a restaurant in Brazil, usually I was unable to properly carry bags of potatos, tomatos, rice and other "large quantities" bags; As time passes by: - You start eating properly and better, because once a day, someone cooks for you and the other workers, and as a good restaurant, we eat a lot of veggies, protein and drink lots of water and fruit juices; - We work hard and we exercise a lot of our muscles by lifting heavy bags and pots; - You start to notice as you arrive home, you fall asleep a lot faster and have nice and healthy sleeping time; - I, for example, became thinner and lost a lot of weight, almost 16kgs, since I started working in a restaurant, now I'm 174 cm and 70 kgs and, of course, got a lot muscular in comparison with 9 months ago, when I started studying Cuisine and working. It's tiresome, it is, but it's pretty wonderful when you notice you are acquiring cool and advanced techniques and a lot of complex dishes are getting done by you with ease. I really love what I do.

How many ounces did you weigh out the bread dough? They came out great!
Makes me hungry just watching. I am more of a night person than morning, so I would rather bake in the evening or even late at night. Don't mind this, but its part of a spatial thing of me, like making the bed, but notice at the beginning of video, Refrigerator is left of the Range and at the end it is right of the Range, so mirroring video is clever, but what side is true? I am guessing that you probably are right handed since that is the most common trait for people, but I could be wrong, so its a mystery.

whoa that's very long hours! I won't survive that for 3 days.
Question: wouldn't making the souffle batter ahead of time like create gluten and stuff, making the souffle bread like and chewy. Cuz I did that with my banana bread and it came out like a chewy brick, so I was wondering why that kind of effect didnt seem to happen on ur souffle.

unless you freeze the batter. When the batter is frozen, nothing is changing i dont think. I work in a bakery and we freeze doughs all the time. If you put it in the fridge, the temp is not low enough to stop the activity in the batter.
