Thanks kindly for the tip about using the dull side of the knife for gathering chopped veggies to save the sharpness of the blade side. After chopping I always just used the wide knife for scooping up the pieces to add to a bowl or pot. Now I don't even have to worry about protecting my hand from being cut!

I have my Mom's Cutco knives. (R.I.P. Mom) Look, they're good knives. But they're going to get thrown around, bashed in the sink, and used to cut quickly on all types of surfaces. Learn to sharpen your own knives, which isn't difficult. You can find out how on youtube. They're knives not an investment. They are a depreciating asset...not an investment. Have fun in the kitchen.

So much safer and easier to buy a frozen meat slicer for under 30 bucks. Just my opinion. Maybe they hadn't come out yet, but Amazon has dozens to choose from.

I use my cheese knife with the rubber handle, it's a great grip for frozen chicken (especially if your hands have arthritic tendencies). I love them all. There's a knife for every job. 🔪👍🙂

That is a Western cleaver, not an Asian one. Asian cleavers, or Chinese cleavers, have a very narrow angle, around 11-14 degrees. Less than Cutco's 15 degree knife angle, and much less than the Cutco cleaver. The cleaver you are using is used to break down large pieces of meat in Asia as it is the West, but you won't find it in Asian cooking. I do like your videos though.

Great question! Simply put, Cutco is designed to be a high quality value buy for home cook, not chefs. The pre-angled carbide stones keep the sharpening process much simpler and safer👍

@@kitchenguyluke3559 I get the fact that they're marketed to home cooks, but you recommend once a month or every couple of months. That sharpener is carbide, and removes too much steel. Four times a year is even too much. It should be used ONLY in rare situations where you have a chip in the blade. Diamond rods at a 15 degree angle would do the same thing better, and not destroy the blade. Ceramic rods would then finish the process. Models from A.G. Russell or Idahone are excellent examples. They are what I use on my knives, including my Cutco's, and they are razor sharp. The majority of home cooks should not have a carbide sharpener, as they use it too often. Cutco should develop an alternative. This sharpener does more to destroy blades, rather than "sharpen" them.

In my experience this is harder than it looks. The tendons are not usually sticking out the way you see in this video and other videos. How do you get the tendon to stick out in the beginning, with a knife? Sorry if it's a silly question, but I have tried this twice and not too much luck.

These tendons were pretty easily accessible. If I wanted to do this & the tendons aren't easily accessible, I just use the raw chicken knife (aka boning knife) which is designed to cut through that unique raw meat texture. Check out the Boning Knife here: bit.ly/2QJoeiR

The common mistake Cutco owners make is over paying for a poorly designed and manufactured knife. There are comparable knives if better quality with similar guarantees for 1/2-1/3 the price, namely from Buck and Warfare. Buck uses similar steel and design but has a much better heat treatment and also a lifetime guarantee for about $70, Warfare makes uses S45VN steel with excellent heat treat and superior design and lifetime guarantee for about $80-$90.

Cutco are garbage 440 soft steel that is better used for pots and pans rather than blades. On top of that they are improperly ground knives.

After 65 years of use, I decided to send them in for sharpening. Was disappointed that the trimmer and paring knives could not be serviced. The replacements are not as comfortable as the originals. #s 20 and 21, replaced by 1720 and 1721s? The 3 that were serviced are cleaned up and sharpened beautifully. Cost me $37 to ship them to be sharpened following the instructions supplied by Cutco. The video is very helpful even after 65 years. god bless y'all.

hm, my Cutco the same knife kills onion and can not get even through ....only cheese knife performs, all other since the very beggining are dull as spoon....very disapointed

@@kitchenguyluke3559Thank you . I got mine set from Costco. Customer service was not that helpful when I called for two years. Shipping charges are not cheap. After soo many phone calls, and talking with Cutco representatives at special events I somehow got in touch last week with someone who wave shipping costs, and shipped my whole set yesterday. Long waiting time is also very inconvenient, since I cook a lot and need knives. All in all , so far very disappointing investment.

I've also noticed a lot of Costco clients using the wrong knife for the wrong job which dulls the knives quickly. What knife/knives are feeling dull for ya?

@@kitchenguyluke3559 The only that worked is cheese knife, all others were sitiing in the storage comaprtement I got for knives. I am very particular to wash them and wipe thoroughly after every use...I changed all my cutting boards that could dull my knives. But to be honest cheep paring Zwilling I used all the time, bcs Cutco's were pain....so I will see how they will come back. One more thing, Cutco knives are so thick and it makes them much heavier and useless for cutting fine sweets I make. We need thiner blades knives

My parents got married in 1955. They got a set of Cutco knives and accessories as a present. I grew up with those knives. I am 65 yo and although my parents are gone, I continue to use these knives. They have never been factory sharpened and are still sharp! I use a steel on them once in awhile and they are good to go. They truly last forever! I love them, they are the best knives on the market.
