用家路過分享一下~ 我前2天做了雙倍份量,因為我家的雞蛋很小,連殻只有50克左右,所以用了7隻,然後看糖量好似比平常多(可能是我低估了brownies 的邪惡😅)想減一點糖,蛋白用了80克糖,到進烤箱烤的途中再看一下原來蛋黃也要用100克糖😨但係已經正在烤了也無力回天了😢….所以…我一共是減了120克糖…足足6成……但是…結果…都是成功的😅 我用的是8吋古早蛋糕模,加了油紙底所以沒有倒扣,也沒回縮,出來甜味是夠的,而且我個人覺得是好吃的,所以如果大家想試但又因為看到糖量卻步是可以減一下糖的,這個蛋糕絕對有減糖空間😅喜歡苦苦啲可以先試原食譜一半糖量甚至像我這樣減6成~ 我找了超多特濃巧克力蛋糕食譜,這個係真的最正👍🏻👍🏻👍🏻
感謝長文分享,因為黑朱古力同無糖可可粉,所以糖量會增加,成品唔算太甜。每種朱古力甜度都唔同,可以再調整😝
@@MoLaLaCook 我用普通黑朱古力~如果用75%以上就吾洗減好多,但我自己平時糖量計,按自己口味就每用一只雞蛋配10克糖🤣所以就算計返一倍6只蛋120克糖應該都好夠~我比較鐘意苦苦地😆

再增加一道均質過程,乳酪蛋糕的口感會更上一層。 乳酪糊盡量用適當容量的量杯,有約10公分以上的高度,均質刀片旋轉攪拌時不要離糊面太近而打入空氣,觀察乳酪糊呈現細緻光亮時可以停止。
