    Thanks for both chefs. Nice recipe.For the adventure people, I thought if the following Instead of Thoor dhal,moong dhal. Instead of Black channa dhal,channa dhal Instead of Lady's finger,snake guard. I will try these varieties once a week. Here is what I learnt Anything with tamarind keeps longer and tastes better with ageing.I do not know why. As a Dr ,I would not take the advice from Cookery chefs linking Black Channa Dhal to Uterus. As a Dr ,I would ask for Level 1 evidence which is Meta Analysis. Any how cooking is a pleasure ,and so is eating. Ask Nutritional specialist about Health benefits. Expert opinion ranks at Level 5 ,which is the lowest level of Medical Evidence Based Medicine practice.

    If we put salt in other vessels, salt will absorb the plastic or other jars etc. But in jadi the efect of salt will not change.

    I guess this is one of few recipes without onion and garlic and extra masala items. Thank you. China Jars - This was purely a transition. People used clay jars/utensils which had issues in cleaning, later they moved to kal chatti for storing salt and pickles. Due to the heaviness of kal chatti and for easy cleaning they moved to using china jars. Salt becomes watery earlier and kal chatti or china jar solved that issue a bit. Now salt is added with anti-caking agent and other agents to solve these issues.

    Salt doesn't become watery, puli when dry in sunlight and put in jar, it maintenance crispy and it doesn't become more soft

    Please do not use plastic containers again chemical reactions are bound to happen since these traditional clay containers are baked in high temperatures they are inert .Please do not use Tupperware containers for storing iddly dough also.

    Salt if stored in metal containers it will corrode, Tamarind if stored in metal containers it has Tartaric acid it will create an inorganic fungus which is poisonous.
