I’m from Lima, Peru and have Italian & Spanish descent. I’ve been lucky enough to call Australia home for over a decade. I came to study and after graduating University, I decided to stay in this amazing Country. After a 5 year career in the Construction industry I decided to completely change professions and focus on my real passion, food. You may have seen me cooking some of my favourite meals on My Kitchen Rules 2019!

    If most people don't already know Peruvians are huge foodies and we have such a wide variety of dishes in the different regions(coast, mountains and jungle). I don't think it is possible for outsiders to grasp the sheer quantity of restaurant choices in Lima, including the fact that you don't necessarily have to spend big dollars to get really good food. I'll give an example from early in 2023. On my last day there 6 of us went out to eat at Jose Antonio, a top historic restaurant in San Isidro. The bill which included some drinks was $100.

    Omg. I remember to love eating French bread with palta and salt for a quick breakfast. Now this reminded me that the palta from Peru was different from the one that I eat from here. It was so good. I tried to make myself the same thing here and it just doesn’t work.

    bueno, no es historiador, tampoco a leído un buen libro de historia. No fuimos colonia, una colonia es para saquearlo y no construir nada como los franceses, holandeses en el África o como el imperio inglés y no hablar de genocidios (etnias) En EEUU, no hay indios y si los encuentras están en reducciones, Hispanoamérica esta poblado de indígenas o mestizos....hay que leer..y sí, la comida peruana es producto del mestizaje....

    Que buenos datos Andy! Que interesante tus explicaciones y tus sensaciones de este restaurant Nikkei, espero poder visitarlos pronto, vivo en Barcelona ya más de la mitad de mi vida pero siempre llevo en mi corazón mi comida, mis épocas ( soy de los adolescentes de los 80’s) y cuando vuelvo intento descubrir lugares estupendos como el de tu video Andy, Gracias!     Ojalá este video llegue a los cocineros de ecuador, chile, bolivia, colombia, argentina.....muchos quieren "imitar" el modelo peruano, pero en realidad deben autodescubrirse para poder estar orgullosos de su historia y construir lo que deseen...pero NO IMITANDO a Perú, porque este país tiene su historia y sobre esa base de ha construido lo que hoy es un orgulllo peruano....la cocina peruana, la alta cocina, los warikes, y puestos cajelleros....todos tienen una historia bien construida y ahora se disfruta ....que siga adelante la comida peruana y te felicito ANDY, recien conozco tu canal, tienes muy buenos videos

    Chifas are everywhere in Peru and serve fusion food. If you want real Chinese food you have to go to “ el Barrio Chino “ the Chinatown equivalent

    That mystery fungus you ate is called wood ear fungus. It's pretty much a mushroom. Interesting food. I'm Chinese and some of the food looks familiar but it's very unique.

    If I can't get the milk, can I use eggs instead? Also, if I can't get the yellow paste, can I use yellow bell pepper as part of the puree?

    No es chili like in North América the name is " aji " or Peruvian hot prpper. It is not small chicken it is called young chicken.

    My sister Gena knows I love cooking dishes like Aji de Gallina. But had no way of getting more Peruvian recipes. She surprised me. She gave me your Cooking program. I found a large variety of dishes! I am Peruvian and seeing these videos also brought me memories of my youth in Lima. Also, the dishes Mom and Grandmom would cook on Sundays. Muchisimas Gracias!     Watching this video brought so many memories from when I used to live in Lima. The Sunday afternoons we would go out after church. The restaurants we ate Comida Criolla and Pollo a la Brasa! And in summer Ceviche Real! The Malecon of Miraflores and Pucusana Beach where we spent 3 months of the year vacationing. My now-married daughter has promised me she will take her husband to Peru and visit the places where I grew up. Soy Peruano y morire Peruano!

    Where is the measurement of water? I can’t tell if you said 3/4 water or 1 3/4 cups of water to boil the dates

    Las recetas en mi canal de KZread son para los que viven en el extranjero y por eso son en ingles...En muchos paises del extranjero NO SE CONSIGUE queso fresco y por eso uso ricotta. Es el queso mas parecido. Si quieres ver recetas autenticas este no es el canal para ti!
