猪油豆腐煲 一间客家餐厅的招牌菜 做了几次 终于研究到了 | Pork Lard Tofu Pot | Mr. Hong Kitchen
大家好 这一期和大家分享在外面吃到的好料 在家自己研究了 的确不错 希望大家会喜欢
材料:
大块豆腐 3 粒
肉碎 200克
猪油渣 3 汤匙
蒜头 2 粒
红葱 1/2 粒
青葱 2 根
调味:
豆酱
蚝油
黑酱油
盐
白糖
芡粉水
绍兴酒
Ingredients (Diana)
1. Tofu 3pcs cut thicker slices, marinate with little salt
2. Minced pork 200g
3. Pork lard 3tbsp cut smaller
4. Red onion half, minced
5. Garlic 2 cloves, minced
6. White spring onion cut ~2cm long
7. Green spring onion diced
Seasoning
1. Broad bean paste 1.5tsp
2. Oyster sauce 2tsp
3. Salt little
4. Pepper little
5. Sugar appropriate amount
6. Dark soya sauce little
7. Shaoxing wine
8. Potato starch solution
9. Pork oil 1/2 tbsp
Method
1. Fry the tofu. Set aside
2. With the balance oil, stir fry the minced pork till oil is extracted. Then add garlic and red onion and fry till fragrant. Add broad bean paste and oyster sauce and fry till fragrant
3. Add some water and let it boil. Taste testing and add appropriate salt, sugar and pepper. Then thicken the gravy with potato starch solution. Add little dark soya sauce and let it boil. Dish up and mix with pork lard. Set aside
4. Heat up claypot with pork oil. Add white spring onion and fry till fragrant. Turn to low heat and add in tofu, then pour the minced pork (step 3) on it
5. Drizzle little Shaoxing wine on the wok side, lid on and let it boil. Then sprinkle some green spring onion.
6. Serve and enjoy! 💕
