Oxtail 牛尾 1400g
Carrot 紅蘿蔔 220g
Celery 西芹 200g
Onion 洋蔥 250g
Garlic 蒜頭 25g
AP flour 中筋麵粉 30g
Unsalted butter 無鹽牛油 50g
Red Wine 紅酒 500ml
Chicken stock 雞湯 300ml
Bay Leaf 月桂葉 3pcs
Rock sugar 冰糖 65g
Salt 鹽 1tsp
Ground Black Pepper 碎黑胡椒 1tsp
Water 水 300ml

    這正是我多年的煮法,原來泰山先生也是這樣煮。有時炒菜之刻我加1 Tbsp tomato paste炒。

    想問下,如果d牛尾浸完12個鐘紅酒之後先煎,會唔會好易燶?因為紅酒有糖份

    小弟大膽來一個小建議。牛尾煮好後把所有東西拿出來隔渣,餘下的湯汁加熱收汁變得濃厚之後再加在牛尾上會不會好點呢?

    會。你呢個係正統做法,我平時亦會咁做,而我甚至唔會要啲蔬菜,但我覺得教大家點煮咗基本功先,咁會易接受啲。

    請問點解最尾要開大火煮嘅時候要留返條罅?然後如果之後用細火慢煮係咪都要留返條罅? 如果我煮完之後諗住聽日先至食,咁係唔係可以就咁刪個蓋就得?定係要滾翻先至可以熄火過夜?

    Tai San, if you just simply wash the whole carrot 🥕 WITHOUT peeling it, that would have been much better because all the vitamins are on the surface of the carrot 🥕 and all the important fibres are on the ‘skin’ of the carrot 🥕👍🏻👍🏻👍🏻👍🏻👍🏻
