    Where I live, its 10 bucks for the meat, 5 bucks for buns. So basically, what you're saying is, if you don't live somewhere extremely cheap, then you're doing it wrong? Fantastic. It costs me about 25-30 dollars to buy all the stuff for a burger. That's the meat, the buns, the cheese, the bacon (because if there's no bacon...you're doing it wrong.)

    I totally disagree! A hamburger is hand food.. . If it's too thick that you need to use utensils to eat it, than it's not a hamburger... May as well call it a casserole, or meatloaf if you need to cut it up in order to eat it. A burger is meant to taste all of the flavours with individual bites.

    I realize he cut/ground his own meat, I think from a chuck roast, but medium rare is generally not a good idea for ground beef. A hamburger is not the same as a steak.

    I agree with the cheese and the size... But if you speak about cooking a meat you must learn that there are differents way to cook beef. • You can eat raw, we call that in France "Tartare". • You can cook it "bleu" (raw in middle and just sear it on the two faces). • You can cook it "à point" (pink on middle) • You can cook it "bien cuit" (Brown) The best Chefs all around the world for an european occidental food (burgers come from Germany, so it's European) will tell you that a "bleu" or "à point" cooked beef is the best way to eat this meat.

    Things wrong with this burger: 1.Too many herbs and seasoning in his patty, patty should only be seasoned with salt & pepper. 2.Using oil to cook the burger, considering he is using high fat % mince the fat from the burger once rendered would be enough to get a nice crust on the burger, a slight drizzle of oil would be sufficient to keep the meat from sticking. 3.The ocean of oil he toasted the buns in. Simple spread of butter on both sides of the bun would suffice. 4.Pesto. 5.That giant slice of onion. Silvered/caramelized onions or finely sliced raw onion. nothing else. 6. Sheer size of the burger making it near impossible to eat. 7.Lack of widely loved condiments such as cheese, ketchup, mustard, mayo & pickles

    It's also fact and can be observed that searing does not "seal in juices". I respect the guy but he's been told an old wives tale that lives on because of this sort of thing. It's the searing its self that makes a good flavor, nothing to do with sealed in juices.

    actually as a chef we keep those at the restaurant. at home I cook frozen patties on pre-made buns because they taste fine and it's way less of a hassle than making this monstrosity. I just creative with the toppings, simple as that.

    You say not to smash the burger in the pan, but then you smash it on the bun, so the bun gets all wet and soggy. The burger did look good, but it was so thick, no one's mouth can open that wide, who can actually bite into that. You have to squeeze it and smash it to bite into it, and then it falls apart and juice go all over the place. You will get juices all over your hands, all over your shirt, and the whole burger falls apart, dripping and falling into the plate. I would rather skip the bun, and put the whole thing onto a plate and eat it with a knife and fork, no bun at all. Or else, I will stick with my "dry" burger, the frozen patties are good, with mayo and onions, a lot less work and very good. I really would have liked to see you bite into that thing and make a big mess, you purposely did not bite into it.

    Darth Belal No, unless you're picking up an entire brisket from Costco and grinding it, it's never going to be cheaper than buying ground beef. And even then, in order get to those savings you're spending a lot of money upfront on a big piece of meat that you then have to grind and store in a freezer. The original poster is right -- this is upper-middle class stuff. You know, the type of stuff that you get from people who think that everyone would be better off if their only option was to buy seasonal, sustainable, locally produced organic jams at $15/jar.

    Poppycock! Never add anything to the beef. Just grab your fresh 25% fat ground beef, form a patty the thickness of your fingers and as big as your palm without counting the fingers, press as little as possible because no one likes a tough burger. Place on a hot oiled grill instead of making it swim in oil. Sprinkle salt and black pepper on top, and sprinkle cayenne powder if you want it spicy. Turn the burger after 2 minutes. Sprinkle salt and pepper on the other side. After 1:30 minutes add a slice of cheese on top, throw a bit of water to make steam, cover with a deep lid. Let steam for 30 seconds. Remove. Add to toasted bun with any toppings you like. THIS is how you make a proper burger. You add flavours from toppings, not by mixing with the meat and ruining the texture. As a bonus, you won't have to dislocate your jaw to eat it. /sarcasm

    This is the thick burger school of thought, and it's usually reserved for grill cooking, where you have an abundance of dry heat and (preferably) charcoal or wood smoke. When pan frying a burger, I generally like a far thinner patty, and I press the burger to get a nice crust. It's a totally different flavor, valuing fond over juiciness.

    I make homemade burgers all the time and freeze them. A frozen homemade burger can still be fantastic. Mine: 2lbs of 20% fat beef to 1lb of either pork or turkey. I mix it up with a spice blend that has no salt and shape them to patties, preferably something with Chili powder, paprika, and cumin. I freeze them between slips of parchment paper and try to eat them within 2 weeks. I let them thaw in the fridge the night before, dust them with salt (pepper burns) and grill them on ultra high until they get a nice cross hatch -- put them on indirect until they reach a desired internal temp -- let them rest 5-7 minutes. I serve them on the best quality packaged buns I can find, because going to a bakery isn't in my schedule. My recipe can yield about 9 generous sized burgers. If you use a kitchen scale, you can get them all the exact same size.

    Although many good tips for the average home eater, some things to point out: Searing meat does NOT lock in juices, regardless what people chefs say. What searing does is allow for deep browning and intense flavor. While it's true you shouldn't press a burger, or any meat, while its about 1/3 into the cooking process, doing so near the beginning is fine. Pressing meat while the juices are active pushes the juice out onto the grill. However, when the meat is placed into the pan and immediately smashed (like smashburger), there aren't juices that rapidly flow through the burger yet. Smashing the burger in the very beginning also helps develop a more flavorful crust as the bottom makes full contact with the hot pan.

    +SOUTHOFSTEVEN The safe temp for hamburger is 160f. The time to cook on each side depends on the temp of the skillet and the thickness of the burger. to be safe use a thermometer to make sure it is the right temp. A good rule of thumb is to cook it on one side until the edges start turning brown and you see it starting to cook through the center. Use the same meat and the same size patty each time and over time you will learn the correct length of time. :)

    +SOUTHOFSTEVEN I usually cook my burgers on a cast iron skillet, at a setting of 8 or 9 on my stove top. I find that's the perfect setting to sear the patty and keep all the juices in. Cooking time really depends on how thick your patty is and how you like your burger cooked and can vary from anywhere between 3 and 5 minutes per side. I generally make my patties about an inch and a half thick and sear them for about 3 and a half minutes per side to get a perfect crust on the outside while maintaining that perfect medium on the inside. I strongly disagree with how he added herbs and whatnot to the patty before cooking, as that now looks like more of a meatloaf than a burger. If you use a good cut of meat with a 20-30% fat ratio, all you need is a little salt and pepper and the meat will speak for itself.

    +SOUTHOFSTEVEN Get an instant read thermometer and cook to a safe temp. You want to make sure the meat is seared on a high heat (That means you'll see some browning) and then flip and repeat. After that You can flip as often as you like. The more you flip the more even the cooking will be, I sometimes flip a very good steak every 10 seconds... but I'm a perfectionist. You see him basting the meat which completes the sear in places the pan will not reach and has the same but lesser effect of evening the cooking.Timing is one of the most important aspects of cooking and it takes time to learn. Though it does ruin the steak you can cut into a piece while you cook to see it's progress and help you learn how heat and cooking levels progress (Just make sure to sear the open face after inspection and as soon as possible and abandon this method, it is only a stop gap learning tool... I still use it if I encounter a new meat)

    NO! THIS IS ALL WRONG! Almost everything in this video is wrong! Rule Number 1 for making an authentic home-style burger is DON'T MESS WITH THE MEAT! Who mixes scallions and onions in their burgers? Not a real burger! NOT A BURGER! THIS IS A MEATBALL! oh my god I don' even know where to start. Let me start over: Do not mix vegetables and spices with the meat before you make the patty! Instead, form the patty, and then season the outside only (just a little bit) so that the seasoning doesn't over power the beef flavor... beef is supposed to be the flavor, it should taste like seasoned beef not chives and mustard seeds... Do not use canola oil or olive oil! You don't need either as long as your beef has fat, the fat melts instantly and greases the pan by itself. Do not EVER put a whole slice of onion on a burger. What is wrong with you? Put a couple rings of onions on it but not the ENTIRE SLICE, that's like 20 onion rings, dude! Gross. Do not chop a roast by hand to make a burger. Well, I guess you can if you want... but I don't really see the point. It might be an interesting consistency but, not authentic... Also, make sure you have a very sharp blade cause that could take a while. I'm sorry guys but this is ridiculous... Some stuff is true like you really need to have a good temp to sear the burger but not burn it. But other than that, this is the worst advice every given about cooking, ever. I'm tired of these weird burgers people keep inventing... DON'T MESS WITH THE MEAT! This guy said one thing right this whole video "treat it like a steak". Treat it like a steak, let the beef do the talking, you don't need any of that extra stuff.

    +Jay bizness I agree with you on all points, but I'd like to add something else he got wrong. Searing doesn't actually work to "seal in juices". That's a complete myth. It is to be done, but it doesn't seal in juices, in fact it dries the burger out by evaporating the juices away. The reason you do it is because it brings out the flavor of the meat.

    Ramsay didn't make a pretentious burger though. He made a standard patty out of average cuts of meat, seasoned with just salt and pepper, he didn't forgo the cheese, and he didn't put a giant hunk of onion in there to double it's size. Ramsay made a gourmet version of a regular burger, not a fancy combination of ingredients in the form of burger.

    I'd have to say I agree with most of these points you've made in this video. It's extremely subjective how to make the perfect burger, but you've definitely got some great ideas. Especially with the pattie. I'd probably have made it a bit thinner, or at least not added so many layers to make the burger too tall to eat, but how you created it was very nicely executed. Also with the bun. People really ruin it with the bun.
