I love the idea of fusion food. Taking the best aspects of two or more culture's cuisines and combining them into one. Today we are combining Italian and Korea food to make Bulgogi Spaghetti.
We used mainly Korean ingredients, but used Italian cooking techniques to make one of my favorite childhood dishes. By undercooking the pasta and finishing the cooking in the sauce, we are treated with a creamy texture. Salty, sweet, and savory. Pasta lovers will enjoy this dish!

INGREDIENTS (Serves 4):
BULGOGI SAUCE
6 tbsp soysauce
3-6 brown sugar (2:1 sugar to soy sauce ratio - adjust to your taste)
1 tbsp sesame oil
VEGETABLES
4 baby bella mushrooms
1/2 onion
3 sticks green onion
4 cloves garlic
ELSE
1 lbs spaghetti
12 oz Impossible meat OR 12-16 oz ground beef/pork
Red pepper flake
Freshly ground black pepper
Olive oil
OPTIONAL GARNISH
Parmigiano Reggiano
Green onion
Sesame seeds
DIRECTIONS
1. Prepare sauce by combining sesame oil with soy sauce. Add the brown sugar, start with 3 tbsp, tasting as you go. Use up to 6 tbsp. Whisk well to combine
2. Chop green onions and mince garlic. Place directly into pan you will cook with.
3. Slice mushrooms and onions.
4. Start boiling water in saute pan (pot is OK). Add 1/4 cup salt.
5. Put pan with green onion and garlic on medium high heat. Add drizzle of olive oil. Let come up to sizzle.
6. Once aromatic, add red pepper flake and push off to side.
7. Add Impossible meat and pinch of salt. Spread into thin layer and let sear for 2 minutes undisturbed.
8. Break up large chunks of meat and add bulgogi sauce. Mix well to combine.
9. Add onion and mushroom. Cook until veggies have cooked down.
10. Add fresh ground black pepper. Cook until liquid has evaporated. 4 minutes.
11. Once mixture is done, reduce heat to low.
12. Place pasta in boiling water. Set timer to 2 minutes before lowest package instructions.
13. Add 2 ladles of pasta water into pan and stir well to emulsify.
14. Once timer is done, add spaghetti directly into pan with 2 ladles of pasta water. Increase heat to medium high.
15. Stir well. Add pasta water as needed in order to fully cook pasta. Taste for doneness until al dente.
16. Garnish with parmigiano reggiano, green onion and sesame seeds.
17. Enjoy :)

    I have never heard about Impossible Food. Great, it is plant-based and thanks for introducing it! ;) Six tablespoons of soy sauce, however, is over twice the daily recommended, maximum salt intake! I like Asian and Italian cousins and I do the same thing, that is mix the two together. For instance using pasta, which is easier to get in mainstream shops, instead of noodles. I find the high salt level in Asian cuisine challenging, however. All dishes are so high in salt. I started adding more umami-rich ingredients, such as mushrooms, to compensate for the smaller amount of sauces high in salt, but it is still more salt than in Mediterranean food.
