1 medium white onion
9 garlic cloves, 3 finely chopped and 6 peeled and whole
¼ cup ricotta
2 large eggs
½ cup panko breadcrumbs
1 pound ground beef (80/20)
1 pound ground pork
½ large or 1 small bunch fresh Italian parsley, finely chopped (about ½ cup)
1 tablespoon dried oregano (preferably Sicilian)
1 tablespoon dried thyme
1 teaspoon Calabrian chile paste or Chile flakes
2 teaspoons kosher salt
Freshly ground black pepper
1 cup grated Parmigiano Reggiano, plus extra for serving
½ cup grated Pecorino
1 (28-ounce) can crushed tomatoes

Awesome, looks great. Adding the tomatoes right into the oil is new to me. I might change up that step, but I bet the flavor is awesome and wouldn't judge anyone for taking advantage of all that oil.

Im sure if you do pasta, it will be bucatini, the new food network fave.....used to be pappardeli.... maybe something more traditional like Linguine, and God Forbid, enough with the Colabrian peppers. Nobody ruins meatballs or anything that palate numbing in Italy or Sicily unless its a side relish or in a diavlo or assassina. You have a ton of potential with your personality and charisma, hope you don't end up as another FN contract actor like most in the Gordosphere
That 'sauce' is pure oil at the end on the plate. Gross. I wouldn't touch that
