    Try it with a splash of sesame oil, some sesame seeds, and a touch of white pepper. The flavors are accentuated just a wee bit more to make it irresistible. ☺️

    Angela Jaitly I agree with a little bit of sesame oil. Not a lot or it will overpower the dish. Freshly cracked pepper will do wonders.

    This brought me back to my childhood. I grew up in Hawaii, this and Filipino style fried rice is what takes me home. Thank you for this, I made this and sat in front of the TV with some cartoons and was instantly in my happy place.

    I learned about Kewpie (technically QP) Mayonnaise when I was living in Japan and that's my primary mayo here in the states. If you want to take your mashed potatoes from really nice to sublime, add a tablespoon full of Kewpie to it along with your usual preferred ingredients and blend well. You'll thank me later...

    @@beekind6267 I usually find it in asian/international stores. Online obviously. My Wal-Mart actually has some in their international section, but live in a city with a lot of asian people of different bgs.

    Just a note, adding water to your rice depends on the rice variety. Some do needs an extra, others don't.

    CultureofBlame correct, like long grain rice. You measure 3 cups of water with 2 cups of rice, 4 -6 servings. She is making short grain rice, so the measurement is different. There are different brown rices which may need more water per cup of rice. 🤷🏾‍♀️

    If longer grains such as basmathi u need more water, brown rice need more water than white rice too.

    Sometimes when I just too lazy to make full on Indonesian fried rice , I just tossed rice with butter and egg, put a bit salt and pepper to taste. Just for some quick dinner. This recipe is the fancier one.

    @@TahrinAziz I've tried Kewpie mayonnaise before, but it's very expensive where I live. I used the best quality mayonnaise we have here in America (it's called Hellman's) and achieved perfect results.

    @@SuzanneBaruch Considering that Mayo is basically fats and it's also used to give grilled a golden crust, it kinda does. Especially considering that Kewpie uses rice vinegar as well. Sounds like a match made in heaven to me

    Question: Hi, Marion. My background is Jamaican. I've been eating rice all my life (quite happily). I tried your method of cooking rice tonight when I made Jamaican style rice and peas, and it was perfect. Like PER-FECT! Thank you!     I made it with regular mayo bc I didn’t have this specific mayo- it’s was still fire!!!! And the tip for taking off the fire and letting steam- my rice was perfect!!!! Thank you!

    If you do it again, add a little bit of mild mustard to the mayonnaise and that will create the japanese mayo.

    This was sooo tasty! Thank you for this recipe. I didn't have Japanese mayo so I made a version by adding rice vinegar and some sugar to regular mayo and whisking it.

    Not being an egg eater, I use "Vegenaise" instead, and have done so for many years I never thought of it as a secret ingredient, but now I'm awarding myself a PhD. in Culinarianism. BTW: being a Basmati Rice loyalist, it's 2:1 water:rice, done in less than 15 minutes on low-low heat, covered, with dried parsley and basil added near the end, and half a stick of butter, sliced, while other ingredients are cooking. Yes, soy sauce and rice are hand-in-glove mates. G'day, and good tuckin'

    That tip on retaining that same amount of water for evaporation for any amount of rice is genius. The first knuckle trick would also be the same concept, but you would need to use the same pot every time when you nailed the cooked rice texture (and remembered the 'right' knuckle measurement).

    In our country, we usually use our fingers to determine if the amount of water when cooking rice is enough. Haha. Edit: I think people in other Asian countries do that too. Lol

    When I was broke and living in Korea, I would get free kimchi and rice at the goshiwon, I'd mix in some mayo to mellow out the kimchi a little bit, and usually add a boiled egg, it wasn't bad..

    I tried this today and my mom loved it! Everyone grabbed seconds. I do not have Kewpie Mayo so I eyeballed the amount used in this video (1 1/2 cups rice {then cook] i used about a little over a tablespoon mayo) and added (1/2 teaspoon) rice vinegar and (1/8th teaspoon) sugar together as a substitute! It's really sublime with the Butter. Ties the dish together nicely. Thanks for sharing~

    chesy Lig-ang I grew up eating most of my Mother’s cooking. She’s from Cebu and she loves cooking fried rice for breakfast. So yummy 🤤

    Thank you Marion, this recipe is so good! Cooking freaks like me do little changes to recipes - like you. To the garlic in the butter I added 4 prawns and some surimi, all cut in small pieces. The result was the most delicate rice dish. The "secret" ingredient is pure magic! whoever came up with this idea is a genius.

    Growing up here in Hawaii we eat Japanese sticky rice. You were taught at a young age to make rice before dinner was ready. The way our moms taught us was wash/rinse and put enough water where it measures up to the first line on your index finger. PERFECT every time!! We do use a rice cooker tho not pot on stove:)

    Didn't have access to Kewpi mayo (but did order from Amazon for later) made this with my Blue Plate Mayo (US Southern brand)......and it still was DELISH! Marion, you never disappoint!
