INGREDIENTS:
#1 Chocolate Hummus aka White Bean Chocolate Cookie Dough aka Chocolate Cake Batter
1 can white beans, rinsed (240-250g) (8,5 oz - 8,8 oz)
3 tbsp oats, small cut
3 tbsp cocoa powder, unsweetened
½ tsp salt
1 tsp vanilla
2 ½ tbsp liquid sweetener (maple, rice, agave, date - syrup)
2 ½ tbsp raw sugar
2 ½ tbsp melted vegan butter or melted coconut oil
optional vegan cookies, fruit, chocolate chips
→ serves 4-5
→ also freezable :)

#2 Broccoli + Peanut Butter
1 broccoli, steamed
1-2 tbsp peanut butter
spices of choice
lemon juice
→ serves 1-2

#3 Lentil Meat Balls
1 can brown lentils (240g = 8,5 oz)
1-2 splashes of non dairy milk, more if needed
spices of choice (i used about about ½ each of fries seasoning, oregano, thyme, majoran, tajine spice mix)
1 ½ tbsp soy sauce
a handful of parsley, chopped
¾ cup + 2 tbsp fine bread crumbs (used 4 pieces of medium sized toast)
also if needed salt to taste, i didn’t add any
oil for frying
sauces for serving
for example:
1-2 tbsp warm blueberry jam
spicy seasoning or 1 tsp sweet chili sauce
→ serves 2-4

#4 Lazy Potato Bites
½ pack potato dumpling dough, vegan
1-2 handfuls vegan pizza cheese
spices of choice
ketchup for serving

#5 Avocado Garlic Toast
1 toast
½ clove garlic (can be used on more than one piece of toast haha)
½ avocado
lemon juice
tomato slices
sprouts
balsamic glaze
salt, spices of choice

#6 Frozen Chocolate Peanut Butter Bites
½ cup vegan chocolate chips (90g) (more or less no need to be precise here haha)
1 tsp coconut oil
10 tbsp crunchy peanut butter (either from the fridge after a couple hours or from the freezer after 30min to an hour - that makes it easier to shape little balls out of the nut butter)
NOTES:
If you’re using natural nut butter (so the only ingredient is nuts) do the following: Add 4-5 tbsp of the nut butter to a small bowl along with a pinch of salt, 1-2 tsp agave and 1-2 tsp melted coconut oil. leave bowl in the freezer for 30 min - 1 hour; then shape the mix into balls and then add the melted chocolate - (amount of ingredients can easily be doubled here)
how to melt chocolate: microwave or oven are the easiest options in my opinion
microwave: “Microwave the milk chocolate for 30 seconds (or 20 seconds if at a high temperature) then take the bowl out and give it a stir. Place the bowl back in the microwave and repeat the process of cooking for 30 seconds, stopping, stirring and returning to the microwave until the chocolate has melted.” (bbc good food)
oven: that’s what I did - place the bowl of chocolate into the oven at 160C for 5 - 6 minutes, take it out CAREFULLY and let it sit on the counter for another 5 min, then stir.

#7 Cheesy Pinwheel Bites
1 sheet puff pastry, vegan
for the vegan cheese sauce:
1 ½ tbsp vegan butter
1 ½ tbsp cornstarch
1 cup + 2 tbsp oat or soy milk unsweetened (280ml)
generous pinch of salt, or to taste
2-3 handfuls vegan pizza cheese
1 tsp white wine vinegar
→ additional vegan pizza cheese or vegan parmesan
(there’s a recipe for vegan parmesan at around minute 10 in this video: • Everything I Eat in a ... )

Try these yummie and healthy cookies: -1 cup oats -1 banana -cinnamon -2 tbsp peanutbutter (Applesauce) Mix everything together, form to cookies, top with berries or chocolate chips and bake for ca. 15 min on 350 F or 175°C! Dip into some oat milk while eating :) A quick and yummmie treat.

a tip.... for thanksgiving my mom always made a whole cauliflower 'turkey'. basically, plain yogurt mixed with turmeric, salt, spice, and whatever flavorings, then cover the whole cauliflower with the sauce (inside and out) and put it in the oven. WHOLE. bake until crispy and brown and it tastes sooo good. we 'carved' it like a turkey and made 1for each family that we had over for thanksgiving :))))

@@rekabalogh1228 yea ofc! we use a lot of Indian spices cuz that's what we have but idk if you have that readily available to you. but for basics, we use turmeric (for color) and chili powder. they are super basic but lil tip, I literally use whatever spices I can find in the kitchen. For example, this year I added pumpkin spice cuz it actually is a pretty great add-in. It has nutmeg, cinnamon, lemon peel, and a bunch of warm spices. Really just use whatever you have in ur kitchen and it turns out so good.! hope that helped 😊

Fav snack: Smooth peanut butter + cocoa powder + dates/maple syrup. Mix everything together and freeze in a little bowl or cup. It tastes almost like "magnum" chocolate! Plus I want to share my oatmeal hack: Instead of nut milk I add a tablespoon of nut butter (and water) to the pan. The same effect, but much cheaper, a jar lasts longer than a carton and less waste. And in reality, almond milk is just almonds and water. :)

Add lots of cheese and french fry seasoning if you can find it! mix potatoes and fry seasoning with water, then add in the flour and then the cheese bake at 200 C. or 395 F. for half an hour instead, as the dough is different. Enjoy!!!

Tips for making breadcrumbs and making less food waste: Take those dry bread slices and buns that you don't wanna eat anymore and let them dry out completely! We put them onto baking sheets and shove them in the oven (WITHOUT heating it!!). Just leave them there, ofc take them out if you wanna heat the oven, and after some days, they're ready to be made into breadcrumbs! Once they're dry, they also stay good for a long time

My favorite favorite favorite weird snack is sweet potato bars. Bake a big sweet potato (the white ones are best but any will work) until its super soft, then mix some oatmeal/oat flour, whatever nuts and seeds you have (pecans and walnuts are my favorite) and maybe baking powder (idk if that does anything tho). Form the dough into bar shapes OR spread it flat and cut it into bars, and then bake until they seem done.

I have one! You melt some chocolate with a little bit of coconut oil or peanut butter and then mix it with your favorite cereal until all the flakes (or rings or pieces or whatever shape ur cereal is) are completely covered, so the you make little “cookies” with the mix and wait for them to harden. Spread pizza sauce on a tortilla, on one half put mushrooms, sliced olives, nooch, baby spinach. Fold in half and cook in a fry pan until crispy on each side. It's like a quesadilla and a calzone had a baby and it's one of my fave quick snacks You can even add white beans to make it more filling P.S. those lentil balls looked incredible, I have to try them :)

i really like making homemade kettle corn! i don’t usually measure and it’s not hard to mess up once you get the hang of it! ingredients: - popcorn kernels maybe less than 1/2 a cup - oil if you want to pop it but i don’t use any topping: - sugar 3-4 tbsp depending on how much you want - soy milk a splash or two (i haven’t tried any other milks but i’m sure they would work( - salt a few pinches really just more than you think you want a little sweet and salty thing going on (you can skip adding and do it at the end to taste it more too( -peanut butter or peanut butter powder if you want it to have a peanut butter flavor too! you can totally skip this part it’s good with or without So while i’m popping the popcorn i make the caramel/ sugary coating, i mix everything together in a smaller pan and mix until it’s golden brown but you have to be careful because it burns easily. you can take it off the heat a few times to see if it’s gotten thicker because you really just want the soymilk to cook off a bit so it can harden on you popcorn. when the popcorn is done take it off the heat and pour the topping over and mix it you can add candies or peanuts as an add in too. this is my favorite snack and it’s oddly filling too! if you want to make more or less just eyeball it! i never measure and it always turns out perfect!

I wasn't vegan when I discovered you, but your videos are what kicked off my interest in going vegan. A couple months later, I now eat completely vegan. I still have some cleaning supplies and miscellanious things made with leather/feathers/etc, but I plan on not buying them anymore when they run out or break. I would like to thank you for introducing me to how awesome a vegan diet can be, all the fun and interesting things that I've seen you eat in your what I eat in a week videos really made me see how amazing vegan food is!

I’ll definitely try some at home 😊 One of the yummiest snack that I make is picked sliced beetroot drizzled over with tahini. That is addictive I promise! The other is rice cake with pb 🥜 + soy/coconut yoghurt + little of (cran)berry jam + shredded coconut 🥥 on top. What I like to enjoy as well is protein bread 🍞 + hummus + soy yoghurt + sliced cucumber 🥒 + herby salt Hope you get to try some, if not, you find some good ideas elsewhere. Bon appétit! 👩🏼‍🍳

Thanx for this video ! For the peanut butter bites, you can use dattes: you just put the pb in them, maybe with some peanuts for extra crunch, then roll them into the chocolate, freeze, and there you have your natural snickers bars ;)

I can reccomend peanut butter sweet dip for any fruit or whatever: vegan yoghurt + PB + any sweetener. You can add some spices or vanilla if you want but this is my basic. Also I like to cut banana in half and then in wedges, put on top some PB, maybe some crushed peanut if you have, freeze it and then cover it in chocolate. Instead of PB layer you can blend dates with splash of milk as a caramel layer

Oh a classic for me is chopped fruit and nuts with soy milk kind of like cereal. Diced apple in a bowl with sliced almonds and soy milk, or FROZEN BERRIES and cold soy milk which gets to be this amazing frozen-yogurty texture if you stir it up.
