I found it amazing that the dough actually goes up 3 times before the yeast run out of food, Had I not made the timelapse I would have never known :p

thanks for the reply. I had thought it was making gas and then stopping and starting again...

the reaction creates gas. Once their is too much gas the weight of the dough collapses the pockets of gas and it falls. then it continues to bubble up to the same "breaking point"
