建議加入兩個試驗項目:一、洋葱粒用市面上的拉線切碎機做,不用刀切;二、Sample 3那個汁用洋葱粒煮,看看食味會不會不同。此外,你用的主廚刀通常磨刀角度建議是約16度(可以看製造商提供的資訊和觀看網上教磨刀的影片),而你好像把刀提得太高了。角度比16度大很多,這樣磨出來的刀鋒會很短。

Thank you for taking so much time to prepare this cooking onion experiment.....#3 taste good but 2 hours is little bit too long for most people!
焦糖洋蔥本身真係相當百搭,本身加上湯做法式洋蔥湯已經好好味,加入牛肉咖喱亦係相當之不得了。不過真係好耗時,唔可以日日咁煮。

Personally, I love uncooked onions 1000x more, crunchy and juicy. Caramelized......I feel like i didn't eat anything so I AGREE WITH MCGRASSY LOLOLOL!!!!! HOWEVER........there is one very famous curry place in Kowloon (which I buy 3 times a week since I was in hk for the last 2 months) their curry sauce is just like your 2nd and 3rd dish, filled with well cut onions.....now I can't tell or able to taste the onions but pretty sure the curry already overwhlemed the sauce but this curry place had not disappoint everytime I came back and I am so happy it still existed. (Hint: the curry place I am talking about has a fake place right next to them)

可能啦,都唔係淨係價錢平嘅。聽到要整兩個鐘,好多人都真係未必會整。 但係有時買返嚟嘅醬料味道冇咁好🙂↕️
為什麼花田切洋蔥不流眼水?眼鏡都只有少少幫助, 我每次切都要開大抽油煙機在下面切才好一點
