Okay people, many are wondering why they don't wear gloves, here's why: 1. First of all there are historical reasons. The art of cheese making is very old and many cheese makers use recipes and techniques developed several hundred years ago and therefore many don't want to wear gloves as they didn't wear gloves a hundred years ago. This is admittedly not a good reason, but it's the reason many cheese makers would probably give you. 2. The curd is very hot and kills most of the different types of bacteria not specifically used for the cheese making process. 3. The gloves make it harder to really feel the texture and quality of the cheese, something that is very important when making cheese. 4. The most important reason: gloves do not work. There have recently been studies conducted in America looking into the usefullness of rubber gloves and the results show that when using gloves people are more carefree about where they put their hands and this means the food prepared with gloves is often covered in more bacteria than food prepared with washed hands only. Therefore the fact they aren't wearing gloves in many cases mean the end product is less contaminated. So yeah, there are many reasons not to wear any gloves and these are only some of them.

To those idiots that are asking why they don't wear gloves, it's because the mozzarella cheese substance in that state is so hot that the gloves would freaking burn through. Also, they won't be able to properly shape the mozzarella using gloves. Don't be so ignorant.

Cheesemaking must follow strictly hygiene rules! Everything must be disinfected, especially with stretched cheeses where we use hot water (more than 90°). Touch is really important in this job, we cannot use gloves.

Appears to be Rennet. A coagulant based off an enzyme called Chymosin. This ultimately coagulates the milk turning it into a gelatin texture.

Gloves are not a magic thing. There is nothing wrong to make food with bare hands if they are kept clean. The watches the workers wear while making cheese in this video are actually what to be concerned here. You can wash your hands with soap usually but it's very likely that you would never wash your watch, and there is loads of bacteria there.

No. If you ever ask a health inspector what they think of people using gloves, they immediately say that don't want people to. People wearing gloves never change them enough, and don't change their gloves as frequently as they'd wash their hands.

Because the water is very hot it'll burn the gloves bacteria it can't be dirty and harder to shape the mozzarell I did it at home and burned my hands

All these workers stick their body parts in the cheese. Who knows where those hands were just before getting immersed in the cheese? They do not wear anything to prevent their bodyhairs and other crap on their bodies and clothing from falling in the cheese. I like the cheese but this is quite disgusting. Where are their “ministero della sanita’”?

Even there's so many complaints regarding no gloves...no haimet (helmet I think..) at least THEIR ENVIRONMENT ARE HEALTHIER & CLEAN. You guys should go & watch food factory in INDIA & INDONESIA.
