Having our own honey bees and freshly harvested honey has inspired us to find delicious ways to incorporate this golden nectar into our cooking. This honey cake is a perfect example of how we love to highlight the natural sweetness and rich flavor of our homegrown honey. The addition of honey syrup not only enhances the cake's moistness but also infuses it with even more honey goodness, making every bite a delightful experience. We hope you enjoy baking and savoring this cake as much as we do!
Honey Cake
Ingredients:
Cake:
1 cup plain flour (Note 1)
1 1/2 tsp baking powder
1/2 tsp kosher salt
225g (1 cup) unsalted butter, at room temperature (Note 2)
2/3 cup honey
4 large eggs, at room temperature (Note 3)
3 tbsp milk, preferably full-fat, slightly warmed
Pinch of orange zest (optional, enhances honey flavor)
1/3 cup almond flakes
Honey Syrup:
2/3 cup honey
1/4 cup water
3/4 tsp lemon juice (recommended but optional)
Instructions:
Preheat the oven to 350°F
Prepare the cake pan:
Butter and line a 20cm/8" round pan or springform pan with baking paper on the base and sides.
Mix dry ingredients:
In a small bowl, whisk together the flour, baking powder, and salt.
Cream butter and honey:
In a separate bowl, cream the butter and honey for 3 minutes until smooth and fluffy, using a handheld beater on speed 7 or a stand mixer with a whisk attachment, scraping down the sides halfway.
Add eggs and flour:
Add one egg and mix with a wooden spoon for 30 seconds until mostly incorporated (the mixture may look curdled). Then add 1/4 of the flour mixture and mix until the batter comes together. Repeat this process, alternating eggs and flour, until all are incorporated.
Add milk and zest:
Stir in the milk and orange zest until the batter is almost completely smooth. The batter should be thick but soft.
Bake:
Scrape the batter into the prepared pan, smooth the surface, and sprinkle with almond flakes. Bake for 45 minutes or until a knife inserted into the center comes out clean.
Cool:
Remove the cake from the oven and cool in the pan for 30 minutes. This step is crucial to avoid a dense cake when soaked with syrup.
Make the honey syrup:
While the cake cools, bring the honey and water to a gentle boil over medium-low heat for 5 minutes. Add the lemon juice and boil for 2 more minutes. Remove from heat and let cool for 10 minutes.
Poke and soak:
Poke about 30 holes all over the cake using a skewer, making sure to go between the almond flakes. Pour 1/4 of the warm honey syrup over the surface. Repeat 3 more times, waiting for the syrup to soak in between pours. Let the cake soak for 15 minutes.
Serve:
Serve the cake warm. Remove the sides of the springform pan or serve directly from the pan.
Storage:
Leftovers can be stored in the fridge for up to 4 days. Warm before serving, as the cake becomes firm when cold.

    Hey FYI to alot of people who didn't know this about honey as well, my dog was attacked by some other dogs, they chewed both her back legs up badly, I thought for sure I was going to have to have her put down. The Vet said no let's try this therapy we just started using, it was a Honey Wet Treatment. They were putting honey on her open wounds. They were able to save one leg, the other did have to come off. Come to find out Honey is used in alot of wound care treatments. Well I keep raw uncut honey now, Dixie "my Boston " sometimes catches her one left leg because she sometimes drags it, if I see a open wound I put that honey on wrap it up within a couple of days the swelling is down and she's going like nothing happen. Honey really is GOLD!! ❤❤❤

    My sister had a very bad bed sore, which had to be cleaned out almost to the bone to get all the infection out. Her wonderful Dr tried the honey on her, and it healed her completely from the inside out instead of topically like most medications.

    @@debbiewhite3601 I'm not sure what type they used on her during her treatments, they would clean her wounds put the honey on then wrap it back up.. she had to go to them every 2 days for a week.. then they had to take the one leg but continued with the treatments for her other leg but just 1 a week.. I did that for 3 weeks. Within that 3rd week her other leg went from looking like hamburger meat to a leg again.

    they had quite a few losses of bees in texas and oklahoma lately because of the flooding and tornadoes sadly - several farms i watch lost their entire bee hives.

    Per the Washington Post this week - We’ve added almost a million bee colonies in the past five years. We now have 3.8 million, the census shows. Since 2007, the first census after alarming bee die-offs began in 2006, the honeybee has been the fastest-growing livestock segment in the country! And that doesn’t count feral honeybees, which may outnumber their captive cousins several times over.

    i was raised by a grandmother who believed a Poke cake made everything all right, no matter what was wrong! lol! We lived near a wooded area where wild bees hived in rotten trees. She would go there with a galvanizes bucket and come home with it full of honey, and never a sting. She wore her regular clothing, no protection. When she was asked how she did it, she just said, "T know bees and they know me". She was born in a small town on the Ohio - Virginia border, which has disappeared.

    Many people don’t know or understand how important bees are to the environment, agriculture and our life in general. Thank you so much for helping preserve a healthy, well fed bee population.     Brooke, you can make HONEY WHIPPED CREAM, it's just like whipped cream but with honey instead of sugar; heavy cream, honey & vanilla, whipped until stiff peaks.😋 Also, you can make WHIPPED HONEY, just take about 1 cup of honey & whip it in your stand mixer for about 10 minutes until turns light in color & light and airy.😉 Lastly, you ought to try FREEZE DRYED HONEY by dropping small pools of honey or drops of honey or both sizes onto parchment paper then into your freeze dryer..🤔 Wonderful news about your bees!!     I as a child had access to my Dad's honey and the honeycomb. He had 3 hives for a family of 8 members. We had 6 gardens of vegetables, Muscadine and scupponong grape vines and fruit trees wild and domestic ,black berry vines that was used by all these bees. Fields with clover were available, too

    FUN FACT- the internet says in 1897 in a tiny town-Roy, New York- a man named Pearle Bixby Wait who was an amateur cough syrup inventor, invented Jell-O. He patented Jell-O & sold the company in 1930’s. In 1964 the Geneese company needed to revitalize the Jell-O so they invented the “Poke Cake”. It was marketed across the Nation. I have eaten poke cake’s since the 60’s & made many poke cakes for my family. Mostly I have used jello, but have also used thinned frosting glaze. 💜👋🏻

    Good morning Brooke, Jason and all residents on the 40! Great video! Although cooking videos co`sume so much of Brooke's time I admit yhey are one of my favorites. And I appreciate rge link to the recipe in the comments. I was born and have always llived in the SE USA. As a child I occasionally had Pokey Holes for breakfast - or even a snack. For me it was normal. Grab a warm biscuit, use a finger to poke a hole in the side of the biscuit to create a small pocket opening. Pour honey in the opening and enjoy! Of course you had to eat fast, it would quickly leak. My solution was to mix honey and peanut butter together then add the thicker mixture to the biscuit. Deliciousness! Sweet memories! I must try Brooke's Poke Cake recipe, it sounds delightful.

    Poke cake is so Easy and Delicious...One of my Favorite cakes to make...First introduced in the 1976 by Jello in their booklet of recipes. Any Jello flavor is good...So moist....Yours looks Delicious with Honey as well!...

    During the depression they made a lot of deserts with honey since sugar was a commodity that you had to have stamps for. It was government regulation. And many farmers had hives if not there was trees with bees.
