Why use two hands against one? Now you have nothing ready for his left hand. Why not taan da or chum kiu fook sau + da? Simultaneous defend and attack.

I believe he is stating that the wu sao and bong sao placement are covering more of the limb, rather than the two being closer to each other, therefore less of the limb is being controlled by the blocks.
