Ive never had a steak in a reataurant that I couldnt make better at home. Also Guga proved in an experiment that pulling your steak out for an hour to get to room temp doesnt do anything because it takes longer than an hour to get steak to room temperature.

It doesn't heat up the inside at all, only lets the outside become a little warmer and drier so that it gets a better sear. Most people just dont understand the point of letting a steak warm up a little, they just think its so that it cooks more evenly or something

Where you buying your steak bro? I hear people say this all the time, but I've had steak at longhorn steakhouse that is consistently better than any steak I make because the quality of cuts that I'm getting is just not very good. I don't want to spend a ton of money getting good cuts shipped from some site online cause it's just gonna cost more than a full course meal at a restaurant.

I love Longhorns steaks they always get a smoky char on the outside it’s delicious
Most restaurants sous vide their steaks beforehand, then just sear them. At least chain steak places like Longhorn, Texas Roadhouse, etc.

Hes not cooking it there. Thats just for the video. He's heating it on the stove beforehand. Thats just residual heat from using carbon steel.
The best way to eat steak is to eat the meat raw with a few handfuls of black pepper, let it get marinated in your digestive tract. Then when you shit it out fry that bad boy up, make sure to eat enough fat so it’s a good runny consistency. That way you can squirt bite-sized pieces directly onto the pan as needed with good sphincter control.
There isn't a restaurant in the world using this method.

@hesoyam881

Every "steakhouse" I’ve been to usually tells you they need 15-20 minutes for your steak. A normal restaurant that has steak won’t care about that steakhouse quality. Most would just cook it with some kinda bbq sauce to offset the lower quality steak and they can get that out quite fast
Damn I actually found a new technique and it makes sense.
The salt dries the surface of the steak. Pat with a paper towel then salt and leave. Moisture on the surface turns to steam in the pan and ruins the millard reaction that gives you that delicious crust. Reverse searing is an easier way to get better than restaurant quality steaks. Get your sear on the outside then put in a preheated oven on 120c/250f. Bake with a thermometer in the centre of your steak till it hits 115f rare, 130f for medium rare, anything more than that will lose moisture. Wrap in foil for 10mins after taking out of the oven to settle then serve.
I read restaurant’s snickers in the title 💀
Nice
Well… That’s one way to do it
I always have better steak at home than restaurants
how do u cook it bruh
Decent!
Can I do this with hot dogs too bro?
Just get an immersion circulator and sous vide that steak! Best results ever, all the time

@martinalexander2054

Was going to say the same. This is not how they do it at a Steakhouse at all. False info
I mean the main reason is because they cook steak all day every day and know what they're doing tbh. At home I'll get it medium rare like once every 4 or 5 times
it's because the chef marinates it in a bit of his MAGIC if u know what i mean

Quality of steak is far, far more important than any cooking method. There is a huge difference between getting well marbled, grass fed ribeye from a local butcher and the absolute shit you get at Walmart.

Real
the only "secret" is the quality of meat and their cooking knowledge...
Imagine doing this for 50-150 steaks a night. 😂 Souvide + quick and hot sear. that will do
To room temperature 😂 it never reaches room temperature
Have worked in the restaurant industry for 15 years. Can confirm this method doesn’t exist.
Wait a minute, what "burning pepper myth'? And what steakhouse cooks their steaks like this?
@peveral4246
7 ай бұрын
1) There's a myth some people vehemently spread and defend that if you pepper your steak before searing it, the pepper will burn. Unless you're using a jet burner or a red-hot branding iron as a searing surface, the moisture of the steak will keep the pepper from burning. 2) Considering how many "steakhouse hack" quips Senpai Kai has made in a lot of his steak videos, I'm getting the impression this video's title is part of the running joke.
It has been five years
Yo bro I think that cow still mooing
I've never had a steak at a restaurant that was better than what I've made at home. Half the time they couldn't even cook it to the right temperature.

@SenpaiKai9000

sous vide, reverse sear, triple sear - it's all to say that it's cooked in multiple stages
You can burn pepper and leaving it out to get to "room temperature" is a myth. Plus it's unnecessary. It's been tested several times over. In this one, he had a steak, cut in half. One half in fridge, one out. Starting temp for both was 38f. "After the first 20 minutes-the time that many chefs and books will recommend you let a steak rest at room temperature-the center of the steak had risen to a whopping 39.8°F. Not even a full two degrees. So I let it go longer. 30 minutes. 50 minutes. 1 hour and 20 minutes. After 1 hour and 50 minutes, the steak was up to 49.6°F in the center. Still colder than the cold water comes out of my tap in the summer, and only about 13% closer to its target temperature of a medium-rare 130°F (54°C) than the steak in the fridge."
@SuperMontsta
22 күн бұрын
"After two hours, I decided I'd reached the limit of what is practical, and had gone far beyond what any book or chef recommends, so I cooked the two steaks side by side. For the sake of this test, I cooked them directly over hot coals until seared, then shifted them over to the cool side to finish.** Not only did they come up to their final temperature at nearly the same time (I was aiming for 130°F), but they also showed the same relative evenness of cooking, and they both seared at the same rate."
Nah I make better steaks than restaurants. I’ve had $70 steaks at nice restaurants and my basted Costco ribeye is better
Love that grey band. Delicious!
I mean, the likely answer is that they just have better quality meats lol.
Nope, my steaks at home are ALWAYS better than overpriced restaurant cuts. Sorry.😂
Umm sir my shit mooing at me sir 😐💀
Oh I thought it was becuase they got years of experience
No restaurant is tempering steaks for an hour let alone 5 minutes, otherwise you would never get your food in time.
None of the restaurants i worked at do this lol. Also you need to shepl out alot to get a good one. Home cooked steak always wins.
I love how modern chefs are persistent in making "steak crust" a thing.
@vaair_
5 ай бұрын
because "steak crust" is a thing
But restaurants don't cook like that though, so your title is confusing.
Who is saying this?
Most restaurants are just buying better meat. If a restaurant served the same steaks you buy at Walmart then they wouldn't be in business for very long.
How many words in a lot? hint...it's not one
I've worked at several restaurants and I've never seen this done. Foods need to be kept above certain temps and below certain temps, this raw meat sitting out at room temp isn't a thing or your asking for problems. Stick with quality meat, ridiculously hot pan, add salt, wait and flip. Depends on how you like your steak done depends on timing. Deglaze the pan for some amazing sauce. Steak should taste like steak... This video makes me want to ask for A1
They arent doing that shit at restaurants lol. If theyre doing anything other than just sticking it on the grill, they might sous vide it before hand and then finishing it off on grill
I thougut u was banned from youtube lol
If you think restaurant steaks taste better at restraunts, you do not cook them correctly
Been finding the opposite. Mine tastes way better

Steaks are ‘NOT’ better at restaurants. If you think that, it’s because you don’t know how to cook one. Restaurants by their nature are flawed for steaks. They must bring you your meal within ‘X’ time, so they cannot bring you a perfect steak. That doesn’t mean they can’t cook a pretty good one.

Steaks are most definitely NOT better at restaurants. Unless you go to a very high end restaurant, then it's comparable

Nah, not true. Homemade steak, if you know what you’re doing, is ALWAYS better than a restaurant one if you’re using the same cut. Also, Uncle Guga disproved the “room temp steak” thing.

@@SenpaiKai9000the whole pepper burning myth is also prevalent in chef circles so yeah i wouldn't put that much stake in what they have to say about steak
Restaurant steaks are always a crap shoot. I don't care how expensive a steakhouse may be if you do your steak at home it will always and I mean always be better than anything you get in a steakhouse. Learn how to do it correctly and you'll have a better steak at about a sixth of the price.
So seven minutes is ideal, not six, not eight, but fifteen is also ideal? One of the most confusing cooking video I've seen in a while.
I agree, I eat steak everyday and I prefer my steak over restaurants. Cheaper to eat at home anyways. The only steaks that have impressed me at restaurants cost over 100$.

Pulling it out to rest until it reaches room temp within an hour is also a myth.
Literally no restaurant is doing a triple sear / triple rest for their food. Nobody would ever get their steaks.
I don't think many if any restaurants are searing a steak 3 × . And if you use good cuts you can nake a steak at home as good or better than any restaurant.
